Jim's Creamy Potato Salad

It's nothing special. It's just the recipe I experimented with probably 20 years ago and have never changed. It came from looking at other recipes and then of course incorporating my own touches through trial and error. Again, it is not special. It's just mine. Considering I had a handful of potatoes in the cupboard slowly turning into aliens I thought I may as well just use them up and make a potato salad. This time I used russets. But really this salad can use any kind of potato. They all work, it just changes the texture a little bit. With this heat it's a perfect side dish. I am going to make some bratwurst on the grill with it. What's going on your dinner table tonight?

I cooked a large batch of shawarma last night after it got dark so the house didn't heat up too much. We just have to microwave some of it for meals now.

@porwest It's thinly sliced meat, in this case, chicken, marinated in Greek yogurt and spices and then cooked on a rotisserie with bell peppers and onions baked with spices and then both loaded into a tortilla. I don't like wraps, so I eat the chicken and veggies without putting it into a wrap. Photo is mine.

Your recipe is a little different from mine you have a few more added ingredients. Potato salad is my favorite food but I cannot eat potatoes. Enjoy yours.

@RubyHawk That's a shame, especially considering for me potassium is a good thing as it lowers my blood pressure. I have high blood pressure and am on medication for it.

@NJChicaa To me real mayonnaise just tastes like butter, so it doesn't do anything for me in most use cases. Butter is good, just not where mayonnaise would be applied.

There is only one dish from the Philippines I remember eating and liking and that was pancit. But I know there are others. I should look up recipes one of these days. I still have the recipe for pancit you gave me but I have yet to make some.

@CarolDM I guess part of it for me is that I usually skip breakfast, my lunches are not particularly heavy—although almost always leftovers—so dinners are the biggest and most important meal of my day. Even on weekends I sometimes skip lunch and just have a light snack.

I love potato salad and it does go well with almost anything you make on the grill. I've added pickle juice to my potato salad but not pickle relish. I like that idea! Pizza here tonight

The pickle relish part I think comes from the traditional mustard style one which typically uses it. My recipe is just sort of a little bit of this style and that style made into one I think. lol Pizza sounds delicious, although I do recognize you ate yours about three months ago.
