What herbs and spices do you use?

My friend is a small time food caterer in my city and I always order birthday food packages from her. Not because she is one of my best pals but because her food is really good. I asked her once what her secret is and she whispered to my ears ‘It’s all in the herbs and spices’. I only know peppercorns, please don’t judge. Of course I often hear chefs on cooking shows say thyme or oregano or coriander but I’ve never actually used them in my mediocre cooking. Lol Then my show off friend pm’d me this photo today.

I use many and I like more fresh herbs than dried herbs as many have no taste once dried. Fresh I use oregano, thyme, coriander, basil, sage, rosemary, tarragon, dill and mint. I use some dried herbs like peppercorn, cumin seeds, coriander seeds, then some powders like curries, turmeric, paprika, cinnamon, nutmeg... I am sure I forget some.

@sol_cee The fresh herbs are in the garden or in the small greenhouse on the balcony. For the dry spice I have a nice spice shelf.

I have so many spices and herbs. I love to cook with them, and it's almost embarrassing, the number I have. We all have favorites, but I don't like to be out of a spice or whatever when I decide I want to make something, so I keep what all I think I will need in the house all the time.

These days I stick to a few herbs and spices, mostly tried and liked before hand. I do experiment with others, but not so much these days, especially not with the hotter spices!

I have used oregano, basil, ginger, and paprika but to make things easier if I just cook for myself I use a seasoned salt,

@sol_cee salt combined with all kinds of spices together or as the Internet says Seasoned salt is a blend of table salt, herbs, spices, other flavourings Of course, you should read the labels because some of them can include monosodium glutamate which many like to avoid

I use many different herbs and spices. I try to use fresh ones when I can, but I probably have about 20 different dried spices in my kitchen.

@sol_cee We use cinnamon, ginger, basil and a few others. Most spices and herbs are good for you even if you don't use a lot of them.

@sol_cee catnip is a herb that cats go crazy for. Some cats get high off of it, but some get aggressive with it. Catnip is also a good repellant for mosquitoes.

Spices certainly adds flavors to many food dishes. Some of the spices I will use are oregano, lemon pepper, dill, paprika, garlic, onion, parsley, and black pepper. I wonder if spices influenced the Simon and Garfunkel song Scarborough Fair Parsley, Sage, Rosemary and Thyme? Fun fact: Actually, in Medieval times these spices did represent certain things. Parsley was comfort, sage was strength, rosemary was love, and thyme was courage.
