What did you have for dinner this evening?

After today's long hike, I needed something hardy (or do you say hearty?) for dinner. I was too lazy to make my own beef stew, and too hungry to fire up the oven and have frozen beef stew. So I settled on Progresso beef and vegetable soup. Of course, my own enhancements were involved, including some fresh zucchini, two kinds of mushrooms, and some Sorrano pepper. I had three slices of sourdough toast with butter on the side. The result was actually quite satisfying. I'll elaborate more later, after I've assessed the after-effects of my dinner. What did you have for dinner this evening?

I took borscht out of the freezer, before I went snowshoeing. It was delicious. I was going to make biscuits to go with it, but I forgot. Saskatoon berry crisp for dessert

@TheHorse Baked the sliced potatoes. Then throw everything else on that and bake until the hamburger is done. I usually throw some cheese on the hamburger for a few minutes before pulling dinner out.

Nothing wrong with Progresso! I keep the cabinets stocked with it in case of sn*w. Like you I’ll add things (I love to throw potatoes in the broccoli-cheese soup).

@TheHorse — I get the “light” version (240 calories in the entire can). It’s “thin” compared to the full-calorie version, so the potatoes also help with the consistency of it. I haven’t ever thought of it as “sweet.”

I love Progresso soups. Our pantry is stocked with them. We had the French onion soup yesterday. Pretty good.

I had a sandwich... sliced cukes with fake cream cheese on dark rye... and probably a cookie or two for dessert. And before you ask, the fake cream cheese is made with coconut oil. Somebody gave it to me, I wouldn't buy it.

Yummy! Hawaii, still just 2:05om. Going to have leftover chili topped with cheese, butter roll, fresh veggies. Probably peanut butter cookies for dessert. Soups good, especially doctored up.
