Double Yoke Eggs

United States
December 5, 2022 10:57pm CST
I used to work at a chicken hatchery long time ago. People were allowed to come and purchase double yoke eggs, and they would really sell. I was just thinking about that, and wonder if they are sold in stores, I don't recall ever seeing any. Have you ever used double yoke eggs, or seen them in the store.

How do you know they are double yokers? Do they candle them or something?

They had people who worked in chicken houses, and they culled them and put them in certain flats and boxes. Chicken house people knew a lot.

@JudyEv In the past, farmers had a process called "candling" to check the eggs. You look the egg in the dark in front of the light of a candle, you can see inside if the yolk is one or two.

No, I've never seen any double-yoke eggs sold in any store in my area. It would be great to have two yokes in your eggs, especially if it's sunny side-up cooked.

I never heard of the term and had to look it up. Learn something all the time on here! Fun fact: What are the odds of double yolk eggs? The odds of a double yolk egg are around 1 in 1000. Maybe that's why stores don't carry them.

I have rarely seen double yoked eggs, even though I worked in a dairy store for a short while one time. I never had any from the super market that were that way.

I get my eggs from a friend who keeps chickens. Sometimes, there is a double yoke or two in the mix. Always makes me smile.

Is a double yoke egg bigger than a regular egg? Does it taste different? I have never seen them in the stores here in Jerusalem, Israel.

Yes they are bigger, and yes they tasted better, the hens lay in the chicken house, the men pick up and bring to hatchery. They were fresh.
