While the casserole is in the oven

I am visiting myLot first this morning, while the casserole for the church holiday dinner is cooking in the oven. Church is providing ham and turkey, we, the congregation, are bringing side dishes. I made a casserole with the "California Blend" vegetables. (cauliflower, broccoli, and carrots) I used two pounds of vegetables. If it does not get eaten, well that is all the more for us. Those who choose it will have a semi healthy side dish. The vegetables are very healthy, but then they have cream of celery soup, milk, mayo, cheese and cracker crumb topping.Those add-ins are what makes it questionable. At home for Bob and I we put a can of chicken breast in the combination and have a main dish from it instead of a side dish. Very versatile veggies.

I do like that veggie blend! I used to use it in pasta salads that I would take to church potlucks, putting the frozen veggies in the colander and draining the hot pasta on top of it. Then I'd add sliced olives and some cubed cheese, maybe some cherry tomatoes, and toss it all with Italian dressing.

@sallypup Oh, we're having a very different dinner tonight! My son has been asking me to make a "Grinch" dinner, so I'm making Roast Beast (pot roast) with Grinch kebobs (green grapes, bananas, and strawberries with a marshmallow topper) and green beans, plus green sugar cookies with heart sprinkles for dessert.

Sounds so very nice of the church Heather. And all the nice food today. Enjoy it. I miss going to the church meals at the church down the road from my Moms with my Mom. RiP

They are, and what makes it even better is you can usually get those veggies at Dollar Tree or Walmart for very little.

I often by 12 oz bags at Dillons (kroger) when the bags are $10 for ten bags. For this I bought a 60 oz bag by Birdseye at WalMart.

Nice! Enjoy your church holiday meal! Just last minute shopping before the rain starts. Going to hunker down through it. Rain slated for Tuesday-Thursday, bi clouds getting darker by the hour at home.
