winner winner, turkey dinner!

Continuing with the trend of using up the foods I have on hand, tonight we're having roast turkey for dinner. Just call it a mini Thanksgiving! I won't have all of the usual trimmings, but there will be plenty of food. The turkey is in the oven right now. I'll make some mashed potatoes, maybe some carrots and green beans, and I'm definitely making some Thanksgiving slaw (which will use up what I have left of the cabbage). I have a jar of turkey gravy in the pantry, so that part's covered. I have a can of cranberry sauce, so I don't have to make that. I don't have any rolls and don't feel like making any, but we have bread and butter if anyone feels like there aren't enough carbs at the table. I have a few packages of stuffing, but I think I'm going to save that for making a casserole out of the leftover turkey. My stuffing lovers aren't going to be home tonight, so it won't be missed very much. What's your dinner plans? Or if you've already eaten dinner, what did you eat?

Your dinner sounds delicious, Enjoy, I made a small chicken in broth in my slow cooker, It came out tender and juicy and my cats are crazy about the chicken too,

@spiderdust I use the jellied broth for gravies and also enjoy just eating a bit as well since the fat can be skimmed off the top,

Your dinner sounds delicious! I had smoked turkey, mashed potatoes and green beans for lunch today at 5 pm. I won't cook anything for supper until around 10 pm tonight.

When all of my kids were at home, I made a whole turkey every month or two. First meal was of course roasted turkey and sides, then I would pick it all off and package it in 2 cup packages for casseroles, taco meat, salads, whatever. Boiled the carcass for turkey broth and it went into the freezer for soups. It was economical, and so nice to have the meat in there to grab. I still bake a turkey now and then and do the same. Or chickens. Although I do fully take advantage of the $4.99 Costco rotisserie chickens! I can't buy a whole chicken for anywhere near that price. Only problem to that is, everyone else realizes that, too, so sometimes they are simply out of the chickens and you either wait, or forget it. For that reason, when I go and they have them, I usually get two of them. The meat is so good in so many things.

I do the same thing with the Costco chickens! I hope they never change in price. We're eating some more of the turkey tonight. I'm making both Pioneer Woman's "chicken spaghetti" and a lower-carb turkey casserole with sauteed veggies (celery, onion, mushrooms, and shredded cabbage), a cream sauce, and cheese.

@MarieCoyle I'm much the same. I've got quite a bit of chicken and turkey stock in my freezer right now. I very rarely ever have to buy any, and that's only if I've run out. I'll even rinse the little tray that the rotisserie chicken sits in with some hot water and pour that into the pot along with everything else. Those chicken drippings are like gold! The low-carb casserole turned out much better than I expected. I'll definitely make it again sometime. I didn't use the herbs and seasonings listed in the recipe, but instead used an equivalent amount of Everything But The Leftovers seasoning from Trader Joe's (which is a "Thanksgiving flavors" seasoning blend).

@spiderdust I don't waste a scrap of Costco chicken..after all the meat is off the skeleton, I toss the carcass in a pot with onion, celery, vegetable ends and such, and make the broth that I strain and freeze for soups, stews, dumplings, you know...been doing that my entire life, I feel it's a have-to thing. Hmmm...Chicken Spaghetti sounds good!

Wow reading this made me think like it was still November. For today though, we ordered in pasta from Olive Garden and got a shrimp Alfredo. We were gonna go eat there but because of my dog who got out of surgery someone had to keep in eye on him to let his wound heal. So we at at home and the food was good

I haven't been to Olive Garden in so long! I think my favorite thing there is the Zuppa Toscana soup, but my favorite entree is the create-your-own-pasta with mushroom sauce.

Now you are having a lovely dinner once again and turkey is so ecomomical. Me, ..we ate all day long. Many different warming comfort foods. Such as curry.

@spiderdust Oh I used some ground beef, lean ground beef and did not have to use much at all. So a bit of onion, garlic, curry powder, ground beef, spuds and rice.

Last week, we roasted a Turkey. I had bought an extra one at Christmas that I froze. It had been on sale during the holidays.

We have two turkeys in the freezers. Hubby says that when he feels better he is going to go the vegetarian route. Going to be interesting. Dinner tonight so far has been a slice of apple pie that I just made. From scratch. Never have messed with store crust etc.

@spiderdust We tend to have different things for Christmas, we have had turkey in the past but also goose, beef, venison, pork... this time we had duck.

@Fleura I have had all of those things for Christmas dinner in the past! I think I enjoyed the duck more than I did the goose, but it's possible that my mom didn't know how to best prepare goose as she was less familiar with it. Over the past few years, how we celebrate the holidays has evolved to accommodate our blended family. We have our big celebratory dinner on Yule/the winter solstice, which is usually a prime rib. Our big meal on Christmas Day is breakfast and we have a ham that cooks in the slow cooker overnight. This makes the day more relaxing and enjoyable for us at this point in our lives and spreads out the season a little more.

We had turkey at Thanksgiving, but not for Christmas. I've done it for Christmas before, but usually we're kind of tired of eating turkey by the time December rolls around.

I forgot how much work goes into a Thanksgiving dinner, even a pared-down one! I'm glad I made the slaw though, as it was a nice contrast to the richness of the rest of the food. It has a maple syrup/Dijon/vinegar dressing instead of a mayonnaise-based one.
