I was looking through Bob's family cookbook a while back and came across "spinach pie". I liked the idea, bought the ricotta cheese, and he promptly mislaid the cookbook.
So I looked up "spinach pie" online. Got an additional ingredient, and proceeded to make said dish.
Of course the family cookbook showed up. It did not need the extra ingredient (mozzarella cheese) and called for two crusts.
So, the spinach pie I made has three kinds of cheese, onions and spinach in a pastry crust without an upper..
We will have three meals out of it. We served sliced tomatoes on the side.
This is a hearty "keeper" which we will enjoy variations of in the future. It does not have as many eggs as a quiche would. The filling is similar to what I would put in lasagna.
I guess winter is a good time to explore hearty, savory meals.

I imagine they would. I made a different version with different cheeses this week. As hubby says, a recipe is mostly a suggestion.

This started with frozen spinach. Can you eat cooked spinach comfortably?

There are a lot of recipes out there, and this is the one I used. It makes six good sized servings.

I would enjoy that as well. I should make it sometime. I love a spinach quiche and a spinach frittata is divine.

I like the spinach and the crust idea. Ricotta cheese is not a favorite, I don't care for lasagna.

We probably will do the same. I made a new version last night with some bacon bits and cheddar instead of mozzarella. It is really good.

Reading the ingredients in your spinach pie reminded me of the cheese and onion pies my Mum used to make. They didn't have spinach but were really nice as they were. They were very basic - onion and Cheddar cheese on a pastry base and with a pastry lid.

Some of the recipes did call for a lid to the pie. I opted not, as that is too many carbs. Unfortunately the crust is the most fattening part of the pie. I made one with cheddar and extra onion last night.
