And I have never been and will never be a scientist! Now, to be fair to myself, I have baked some yummy things over the years. Chocolate mint Squares, Snowball cookies, pecan pie, fudge, lemon pie, and others sweets that were, well, sweet. Unfortunately, tonight's banana bread won't be remembered among those. It's ugly as all get out. Too much batter overflowed a too small loaf pan. Thankfully I lined the rack so I'm not scrubbing my oven tomorrow. It doesn't taste too bad. I have no idea what I did wrong. I'm embarrassed to post a photo. The truly weird thing about this "bread" is that Dale tried a bite and actually liked it! Think I'll put on the coffee pot and scoop out a serving for us. Ooohh, I wonder how it would be with some vanilla ice cream.

Some loaf pans are just too small for the amount of the recipe. I bought the large loaf pans and don't have a problem with overflow. Having a loaf pan that is too small isn't your fault. They shouldn't sell them in different sizes. I've always said that! It just makes the cook feel like they failed and that isn't the case at all. Just because what you baked doesn't look "pretty" is no sign of failure, either. As long as it tastes delicious, you didn't fail. You made a perfect loaf of banana bread!

@RebeccasFarm We both did eat a small bowl of it with vanilla ice cream and coffee. Hopefully it won't hurt his stomach.

Most things are better with ice cream . I’m glad your husband liked it that’s a plus at least. I’m a good cook and baker but I’m probably a better baker than cook.

I rely on recipes for pretty much everything except things that I've been making for over a dozen years. Baking definitely is a science and I'd never try to freewheel anything. At least Dale liked it!

For baking if your measurements goes wrong you fail. Cooking can be blended if you realize something is going wrong.

I wonder what went wrong with your banana bread. Was it just the too small loaf pan that didn't let it cook properly? Having to clean your oven if it had overflowed would have been worse Hope the ice cream did the trick

I'm not sure, but it never got done enough. It's more of a brown banana pudding cake. It was good, though with the ice cream.

When stuff like that happens in my kitchen I slice the bread best I can and fry it in a bit of oil. That firms the mess. Or it could live again as banana bread pudding.

My first few tries at banana bread all overflowed the pan but I've learnt my lesson now. And tasting good is really the main thing, isn't it?
