Two thirds fresh

For dinner today, we had three dishes. The sweet potatoes were dug from our garden a couple of days ago, the fried okra (before it was fried ) was picked this morning, but the pork chops were from an unidentified hog. They were all delicious. I baked them in the microwave...I put butter, salt, black pepper, cinnamon, and brown sugar on my sweet potato. Dale dug one hill and got about six potatoes, some more should be ready before long. This is his first year raising sweet potatoes and they're off to an excellent start. Do you like sweet potatoes? I really want to fry some, also.

I eat and like sweet potatoes raw but won't eat them cooked in any way.

@1creekgirl No, sweet potatoes are better for us raw than they are cooked. Heating sweet potatoes turns more of the starch in them into sugar, which can cause problems for diabetics, as well as make blood pressure rise.

@DaddyEvil That's interesting. I just have to eat foods that are easy to digest which cuts out most raw fruits and veggies.

I love baked sweet potatoes. I may be alone on this, but I enjoy them pretty much just how they come out of the oven, without anything on them. Occasionally, I'll sprinkle a little bit of cinnamon on one, but for the most part, I just love the basic flavor. However, I would never eat a regular baked potato plain.

@1creekgirl Fresh are definitely the best. If I had sweet potatoes the way you ate them I probably would have preferred them that way too. Since I haven't, that is probably why I am happy with plain.

I think we have about 50 acres all together, but a lot of it is woods. The garden is usually a little bigger than it needs to be, but Dale loves planting it and I love cooking and eating it!

Oh yes, we like sweet potatoes. We liked them baked and mashed. We tried sweet potato french fries and didn't care for them as much. Not sure why though. Maybe I'll slice them thin like a potato chip and fry them sometime.

@RebeccasFarm A few years ago instead of a new mattress, I bought a memory foam topper. It's really so comfy now. Maybe it would help your hip without having to buy a new mattress. We got the first one at Cosco and the second one at Walmart.

I have bought a couple of times, I tried to fry them and we did not like at all. We tried baked and we thought that it was not worth buying a third time.

@1creekgirl - I imagine it's a matter of habit, the stores tried to promote the sweet potatoes (a lot easier to grow than the regular potatoes), but people do not like them.

@1creekgirl I always grew okra when I had a garden. I hardly ever buy it because the pods are always too big and hard. I like little tender pods.

@LindaOHio I've made pumpkin pie for years, but I don't remember the last time I made sweet potato pie. Do you have any suggestions on how to get the strings out? I do have some cool whip in the freezer I'll probably use. I'll let you know how it turns out. I do have a really good sweet potato casserole recipe that Tammy has made at Christmas forever.

How nice to have your own harvest of sweet potatoes! We like sweet potatoes! I mostly bake them in the oven as fries with olive oil and some ginger powder (that's the way I made them for the kids when they were little - and it just stuck).
