Monster Summer Squash

I have to admit that the garden was neglected for a couple of days after the big storm here last week. It took me a few days to go check on the squash and what a surprise!! Monster squash!! I had two huge summer squashes ready to pick! One was right at 12: long and the other one was over 14" long. Needless to say, we had fresh squash along with our dinner that night. I only cooked half of the 14" one and we had leftovers! The next batch of squash will go into the freezer. How is your garden growing? Any monster veggies? Photo Credit: My Own

I have got to find a squash casserole recipe. We need something different from sauteing on the stove!! This one seems a bit sweeter than crook neck squash. It's taking some getting used to!

@kareng I am sure you are familiar with zucchini bread. You can use yellow squash for it instead, it’s very good! Just shred the squash. If it has a real thin skin, you don’t even have to peel it. I shred it if I have a bunch of it at once, then I freeze it in one cup portions to use later.

Yay! Our beets are sprouting here. Never tried them before! Hubby likes them pickled. I don't care for them much.

No garden here. We have some plants in our balcony but some got a bit damaged due to extreme heat - 44 C plus, even with a lot of watering. Waiting for some natural rainwater. Our Balcony space is less for making a Garden.

My hubby picked the second one today, which was bigger!! Crazy!! I'm used to Crook Neck Squash!! Small or smaller!!

The closest thing to a garden I have is all the aloe that is spreading like wildflower in my backyard. But I haven't harvested any of it for consumption purposes. That squash looks amazing. I'm a huge fan of squash. Now makes me hungry for some!

I cooked half of that thing and had leftovers. Froze the other half. One big daddy #2 now. He will go straight to the freezer. My husband has already said he has had enough squash for awhile. I need to find a good squash casserole recipe!

@moffittjc I am anxious to see how many more will be ready to pick when I get home Sunday or Monday!! I'm babysitting while my daughter has her pool tournament this weekend. She won her last match so still going!! Lots of long matches tonight and delays. Gonna be a long one! I foresee me going home on Monday instead of late Sunday.

That's a nice-looking squash. I like them big like that. I don't find them like that in the stores, but I have gotten them from people who give them away.

I didn't know they would get *that* big. We always planted Crook Neck Squash and that is what i grew up on as a kid. it was nice and tender though despite the big size!

@just4him Crook Neck squash is much more tender when small. I don't see a difference with summer squash. These are cooking up just fine.

@kareng People from church would bring them in. Nice large squash and zucchini. I was surprised by how small they were in the store. I like them larger.

Yep, but this one cooked up just fine and tender! We always picked the crook neck squash on the smaller side.

Thank you!! The one I my hubby picked today is 14" long and about 6" in diameter! It's bigger than the one in the photo. I'll be blanching and freezing it.

The second one ended up bigger than the first by the time my husband picked it today!! Crazy big! The first one was good!!

Looks like a meal on its own! I only really like Butternut Squash, but I dare say they all taste mostly the same

I don't think I have ever tried the Butternut Squash. We usually plant Crook Neck Squash and I find this Summer Squash a bit sweeter than the Crook Neck! Going to have to plant some butternut squash next!

It was delicious! I cut it in two, fixed half for a meal and we had leftovers. The other half went into the freezer. Now ready to freeze the second one! It was even bigger!!

I just planted a few pumpkin seeds. i would love to get a patch going for the chickens! They love pumpkins and it naturally keeps the worms away, so a good thing to feed them!
