What's on the Menu Tonight?

It has been a crazy day here keeping up with chores, feeding/watering animals and getting things done in general with this cold weather! Our high was only 36 F today, but with the wind chill felt like 27 F. Brr! We are not used to those kinds of temperatures here in the deep south!! I took the remainder of my roast that I fixed the other night which was more than half of it and turned it into a beef stew. I added corn, potatoes and green peas to it. I forgot to pick up carrots when I stopped at the store today, but that made my husband happy since carrots are not his favorite vegetable. It turned out delicious anyway! It's cold, slippery, and snowy. We had about a two hour period this evening of frozen drizzle. We did not need that, my driveway and walkways were all cleaned up and salted...but some of the ice stuck anyway. We did not take the trash to the curb. It's not very full at all, I can miss this week, and I am not going to fall in the driveway to try to take out the trash. Son asked for spaghetti and meatballs, so I made it for him since today was a stay at home day. He did eat a salad as well. I wasn't in the mood for spaghetti for some reason, so I had some soup and a salad. It was all good, he said.

I'm wanting soup right now and leaning towards that for dinner tonight, but I know my husband is going to vote for gumbo. We will see.

I had pork and sauerkraut and mashed potatoes that my husband's cousin made out of a pork roast she founds in my freezer. Our weather is cold, cold, cold with s**w on the ground. Have a good day.

That's an awesome way to use up a roast, and something I do often, especially in the winter. We're still finishing up the last soup I made and when that's gone I will get to making another one. For dinner it was just a simple night with Bremer Salisbury steaks and macaroni and cheese and buttered peas on the side.

I'm thinking we may do some soup tonight. I didn't get my white beans on earlier to put my leftover ham in. So that won't get done until late if I put them on right now (4 pm). I think we will just save that for tomorrow. I could do a pot of gumbo too. I'll cheat and use a mix...shhh!!

It is COLD here in the Panhandle of FL. 33 to be exact. The day started out with 60 then by 3pm it was in the upper 40s. Gonna be cold tomorrow as well. I had a Baked potato with butter and sour cream, and ate the 3 wings I had left over from last night. Tom fixed a salad.

Feels like 37 here right now at 4 pm and that is the high of the day...47F. It did not get above freezing here until noon today and was still below freezing with the wind chill. Dropping back into the 20's again tonight and tomorrow night. I think we have one night off and back again. So ready for this to be over!

Glad your dinner turned out well. Sounds like a good meal on such a cold night. My husband made pasta with homemade red sauce and some hot Italian sausage. I didn’t eat the sausage as I’m a vegetarian. I had leftover carrots he made last week and didn’t eat the leftovers of. I don’t like that and kept hoping he would finish them up but he hadn’t and I didn’t want to waste them so I ate them.

Sounds delicious!! I would have to eat that for lunch though since I have acid reflux. Any spicy after 5 pm will keep me up all night long.

@shaggin When you start gagging on acid coming up your throat in the middle of the night and sometimes your nose also, you will definitely change and/or watch your diet better. Not a fun situation and leaves you to where you have to sit or stand up, can't lay back down for hours.

@kareng that sounds awful! I had heartburn for probably 30 years. I had to stop drinking juice. I get it if I have zesty Italian dressing in pasta salad too for some reason.

Stay out from the cold and eat warm food. Our dinner last night is sotanghon or glass noodles with tofu, shrimp, and veggies mixed in it, and of course rice! Rice is life.

I only go out when I have to. Have to feed the dog, cats and chickens every day. Today we had errands to run and will be doing that again tomorrow.

I cooked a beef roast recently with carrots, potatoes, celery, and onion powder. Today I cooked meatballs with mashed potatoes and gravy, along with some leftover fried cabbage.

@1creekgirl I'm supposed to be cooking some white beans and putting my leftover ham in there today, but haven't gotten it on yet. This cold weather is really doing a number on me with "I don't want to do much of anything" right now but stay warm!

I am fixing to either go put some soup on or gumbo. Undecided. Will ask the hubster what he prefers and I'm sure he will chose gumbo. I am more in the mood for soup!
