The Nutrition in Eggs

I enjoy eggs nearly as much as I do potatoes. I have been enjoying a couple of eggs and a variety of fruit for my breakfast. I know they are high quality protein but I was wondering the other day what else in the way of nutrients eggs had in them. In my research I found that they are chuck full of other things as well. They have healthy fats and vitamins A, B2, B5, B12, D, E, and K. They also have folate, phosphorus, selenium, calcium, and zinc. As well as the yolk being particularly rich in fat-soluble vitamins (A, D, E, and K), choline, lutein, and zeaxanthin, while the white provides most of the protein. So vision, bones, cell health, cell growth, skin, oxygen in the blood, and some cholesterol. Most of the nutrients are found in the yolk so be sure to eat the entire eggs. For most healthy adults eating one or two eggs each day is considered safe. They are also high in cholesterol so those people with cardiovascular issues or high cholesterol need to watch how much they eat. I may cute back a little since I don't want to get tired of them and I do have high cholesterol. I see my doctor next month and will see how my cholesterol is doing at that time.
Do you like eggs? Eat a lot of them?

There's no one to make them for me; so I haven't had any in a couple of years. I enjoy scrambled, deviled eggs and egg salad.

We do too. I'm sorry you don't have someone to fix your favorites for you.

We're doing a vegetarian diet at this point. Especially hubby. I eat eggs two or three times a week. I really don't like to think of where those eggs come from, the condition of the hens but I need solid protein that isn't a bean sometimes. Same with cheese: love it but vegetarian cheese is just nasty. Plus cheese is so loaded with fat and salt. But it brings variety and taste. Just can't win.

I could not eat a vegetarian or vegan diet. One of the few things I have left to enjoy in life is food.

I like eggs very much, and I try to eat them twice a week. I don't have a cholesterol problem, I suppose I could have them more often. I try to eat as much protein as I can, and as healthy as I can.

Yes, I love eggs and eat a lot of them. Once in a while, Pretty will tell me she doesn't want any (I always ask when I make them.) and then takes part of the eggs I've made for me. And that's okay...
I don't worry about the cholesterol in them. For healthy people, one to two eggs a day is considered safe... I have health concerns but cholesterol isn't one of them.

I don't either. Food is one of the few joys I have left in life.

I used to. Good protein. Now I'm allergic to them/they make me sick. Crazy at this age.
