Potatoes!

I don't have much of an appetite in the heat of summer. Many like veg salads and I am not a fan. Pastas are okay. But, I like light snacks. So, this evening I had a big baked potato. Plenty of butter, pepper, chives, and sour cream for this girl.
I live in Idaho, and am a proud tator. I love them so. Plus, they are very nutritious. They have vitamins C and B6 as well potassium, flavinouds, antioxidants, and phenolic acid. There is a resistant starch which is a type of fiber that feeds beneficial gut bacteria. It also helps with weight management.
I love me some baked tators. Heck I like them scalloped, fried, simply boiled, and mashed too.

I love potatoes , but I have to have something with them. If mashed I like butter, jacket or baked potatoes I like butter and cheese, or sour cream and chive dip on top, roast potatoes are a must on a Sunday dinner. I make dauphinois potatoes too and chips. Perfect as a topping on a cottage or shepherds pie. Mashed potatoes with sausages and onion gravy …yummy.

@celticeagle it’s delicious ….layers of sliced potatoes, onion and grated cheese, pour over a mix of milk and cream ….black pepper ….bake in the oven about half an hour.

In Idaho, you’d better like potatoes!
I don’t know how long I’ll be gone on this trip, and I didn’t want my potatoes at home to go bad, so I brought them with me. They’re two points on my diet, easy to fix in a microwave, and like you said, delicious!

Potatoes are always good with me!
I like them most ways they can be fixed, even as candy. (I haven't made potato candy in years but did enjoy it the last time I made it.)

@celticeagle It's really easy to make. I used to make it when Pretty was still in school and take it to her classes for the students. I did have to tell the teachers that there was peanut butter in the candy, just in case somebody had an allergy to it..
You boil a medium sized white potato until it's soft. Spoon out the inside of the potato into a medium sized mixing bowl and start adding powdered sugar to it. The potato and the sugar combined will turn liquid. You keep stirring in more powdered sugar until you reach a medium hard stiffness and roll the dough out on a cutting board about 1/4 inch thick. Spread either creamy or crunchy peanut butter thinly on the rolled out dough. Start rolling the dough with the peanut butter inside it until you've made a snake... Slice the snake into 1/4 inch cuts and dip the cut ends of the dough in powdered sugar. Lay the circlets out on waxed paper and let them sit for a few hours to start hardening. You can start eating it any time after dipping the cut ends of the dough into the powdered sugar.
When I took it to the school, I'd layer it in a bowl with waxed paper between each layer and didn't pack it so tightly that the dough circles touched each other or they would still stick together.

I also loved potatoes all my life, Cannot get my favorites Idaho but the ones I buy russet are great too and I also love them in all ways,

I love potatoes in any way, shape or form. I just don't like them with onions.

@celticeagle I can't stand the smell and taste of raw onions. I will eat cooked onions if there aren't too many.

I love potatoes. We cook potatoes in various ways. Baked, boiled, in soup with tomato, and mashed too.
