Scrambled Eggs for Dinner

Sometimes you just need to have something that's relatively cheap, simple and easy. That means, a scrambled egg night, and tonight is such a night. Hey, consider it a consolation that eggs have come back into price favor with me. My last batch was $2.70 a dozen, although I went to Ruler today and they were $1.99, but I already had two dozen, so I didn't buy any more. I cooked up some onions and yellow bell pepper. I will add in the egg mixture with some milk and scramble it up. Then I plan to add some cheese. No meat this time, we're just going to have straight up scrambled eggs. On the side we plan to have some toast. We'll likely put ketchup on the eggs. I know that's an area of contention, but we like it. What's going on your dinner table tonight?

I usually have eggs for lunch, but they are also good for dinner. I made turkey burgers for dinner.

If I make eggs, say, on a weekend, it's basically a late breakfast. I rarely eat them for lunch during the week unless I have some leftover from a dinner.

@porwest Yes, of course she's taking advantage of me...that's her way. She is planning on moving by the end of the year. Somehow I will need to rely on cousin #3. She says she can do it; but she cancelled on me again yesterday. I just need someone that I can trust.

@porwest Cousin #2 doesn't want to do anything but her usual; and cousin #3 is too busy to come over very often. She will be coming over today though!

@LindaOHio It doesn't matter what she WANTS to do. It matters what YOU want HER to do, because as soon as you hand her money, she's now your employee and you are her boss and you determine what gets done for the fee paid. At least in my world that's how it works. If in her world that's not how it works, I'd have two words for her. "You're fired." Clearly you want more than sandwiches, so...speak up. My personal opinion? I think she's taking advantage of you just a wee bit.

We probably have scrambled eggs for dinner about twice a month at least. It's cheap and easy and of course, tastes good.

@rakski Plus, it's a really cheap meal, so it's win win. My last dozen eggs were $2.70, so that means my dinner was about $1.80. You can't beat that. I use 8 eggs for a batch of scrambled. Even if you cost in the other ingredients, it was less than $3 for the entire meal to feed two.

I used to cook scrambled eggs adding onion, capsicum, green chilly some coriander leaves it gives you a good taste eating with wheat chapati

Yeah. Scrambled eggs are traditionally a breakfast food, but I don't eat breakfast at breakfast time ever, but do like breakfast food, so sometimes breakfast for dinner is a winning choice.

Sometimes breakfast for dinner just works. Of course, I never eat breakfast at breakfast time, and do like breakfast food, so I have to get it in somehow. lol Chinese is always good eats to me, and we have it at least once a month around here and of course, always go nuts when we do.

I like the extra zing of ketchup. But I think both work. I have sometimes put salsa on eggs.

We had gammon, fries for tea last night . Following that we had ice cream. Scrambled eggs are good. I dont add anything to mine. I do have toast on the side.

If I were just eating scrambled eggs I could eat them plain. But when it comes to having them for dinner, since that's our main and biggest meal of the day, I have to beef them up a bit and make them heartier.

I eat much vegetable salads for my dinner today, boiled okra with the chili hot sauce and leafy camote tops, I have also a sour fish. What a yummy dinner tonight I have.
