Getting going on the bagel bombs

I made an assistant principal a lemon pound cake for her birthday last week. She was so happy and then said that I needed to make bagel bombs next. She said "it has been a minute". I don't even remember her ever having one. Bagel bombs are like mini-muffin-sized rolls that contain flavored cream cheese. The recipe for them uses just half of the dough recipe so I decided to make 2 batches to use all of the dough. One will be the traditional ones with a bacon-scallion cream cheese center and the other will be vegetarian with grated cucumber and fresh dill. They are topped with a homemade "everything bagel" seasoning. I will heat them up in the oven tomorrow morning so I can deliver them warm to the office. I actually will probably split them--half to the office and half to the teacher's room. I have the bacon cooking and the grated cucumber draining. Next up is mixing the "mother dough". Oh how I love my KitchenAid stand mixer! That thing is going to get a workout today!

I had never heard of bagel bombs. I would add lox and red onion, of course.

Girl, if I had the money for the ingredients and to pay you, and it was more practical, I’d have you overnight some to me at some point. There is no way I can make them as good as you would. I might give it a try sometime though; I just might. It never hurts to give it a go!

*sigh* You live too far away! I ate breakfast at 5 am and you're making me hungry when "late lunch" isn't until around 5 pm.
