Bob went to the Marion Library

He went to the Library and then came back with a big bag of zucchini, as well as books.I already had three medium zucchini in the fridge.
He sauteed some with onions for lunch yesterday.
The ones I already had were slightly smaller than a 1 liter bottle. Tonight I shredded one up. Added salt and pepper, two eggs and a half cup of self rising flour. Voila! zucchini fritters for our evening meal. It is running late, because Bob napped.
I have not made these in about thirty years. My kids would not eat them, first hubby was on the road.I had to eat them all alone. They would be good with sausages, or catsup. Or with salsa. They are kind of bland, but good to eat if your stomach has a problem. Mine does, probably from all the cold remedies.
I am going to head off to bed. It is good to eat more veggies.

You can always shred the zucchini, put it into freezer bags and stick it in the deep freezer. It's good for about 9 months that way. There are a lot of things you can add it to.

I never mind having extra zucchini. I shred it for breads, soups, fritters, etc. bag it up in two cup portions and freeze it. Free fresh veggies are a good thing!

That's a good idea. I really like zucchini/ courgettes. I grill slices of them, or saute them with some mint or basil, or make a tasty courgette and cheese soup, or courgette bread (kind of like a tea-bread, with pineapple and dried fruit), or courgette and chocolate chip cookies (Little One's favourite), or courgette bhajis, but so far I have never made fritters!
