One thing about this wonderful little world here we call myLot, is that we tend to share a lot of foodie posts. That means there are always myriad ideas of things to cook or try to keep us well occupied in our kitchens. Take this little idea that came from @thislittlepennyearns. A play on a pot pie, or a taco salad casserole? I am not sure exactly what one might call this. A double layered strata, perhaps? She made this one night and shared it with us in one of her discussions, and it was enough to make a "ding" sound off in my head, and I decided to try it myself—with some Porwest touches of course. I took one tube of crescent roll dough and stretched it out on the bottom of a deep casserole dish. Then, on the stove, I browned some ground beef and drained it, and set it aside. In went some chopped celery, onions, yellow bell pepper and I also added in some sliced black oloves. I cooked that up a bit, then added the ground beef back into the pot, warmed it up, then added one packet of taco seasoning mix, 2/3 cup chicken broth (I didn't have beef open), and then about a cup or so of salsa. I then took some refried beans and spread it out over the crescent layer, poured in the beef mixture, topped it with a hefty helping of shredded cheese, and then put a second tube of crescent roll dough over the top. I set the oven to 350 degrees F and baked it for one hour, and the result was perfect. This turned out to be a dish that definitely hit the mark and will definitely be something I would do again. I am even thinking I could use this idea for a few other types of "casseroles." What if I made a chicken and rice mixture with vegetables? Or some kind of a pot roast kind of an idea inside? I believe April may have created a monster with this one.

Chris is very happy you like it. That's a recipe that his grandma taught me. Lol so now you have a piece of Boone family history. I've also done bacon cheeseburger bake . Omit the beans. Use hamburger meat cheese and bacon, sometimes BBQ sauce and then bake.

There it is. The name this should have. Boone's Famous Taco Pot Pie. lol. I had it on my radar for a while—since you first posted it actually—and finally decided to make it last night. It was awesome! I imagine there are a ton of possibilities for this, and maybe I will try that bacon cheeseburger one next. It just has all the right elements to make a perfect meal and is something that's right up my alley. Thanks for letting me on to it.

That's intriguing! I had wondered what the patterns on the top were. Glad it turned out so well. Isn't the crescent roll dough a bit sweet? And doesn't the dough on the bottom go soggy?

No, not at all sweet. Flaky and buttery and quite good. Very much the consistency and flavor of a croissant, I think. I use this to wrap hot dogs sometimes. As for soggy on the bottom, it didn't rise like the portion on the top, but was not soggy at all.

Look online for "Runza casserole". I use two tubes of crescent rolls. The filling is cooked cabbage and onions and ground beef, then a layer of cheese, for us it is usually cheddar, topped with another layer of crescents on top. In Kansas it is Bierock Casserole, Nebraska it is Runza.
