I Had Almost Forgotten About Them

A lot of the time when I go over to mom's, I'm scanning her cupboards and refrigerator to make sure she's using stuff up. Normally I know what she has since I do 90% of the preparation of her meals and shopping.
But occasionally my sister will do some shopping as well and get mom some "goodies."
The thing is, sometimes even the easiest tasks when you have dementia can become complicated, and my sister bought mom some cheese and ham and tortillas, so I had told mom at some point to make ham and cheese quesadillas.
Now, the way I make mine is I put them open in the microwave for just long enough to get the cheese melted a bit (sort of to form the "glue") and then fold them and finish them off for a bit longer.
I noticed she wasn't doing anything with the stuff, and so when my wife and I dropped her back off at home yesterday, I decided to make her a couple of ham and cheese quesadillas—but I have not had one of these in years and had almost forgotten about the idea of making them.
This morning I made one for myself at home since I had cheese and two leftover tortillas from another meal, and man, was that good.
These might become a snack staple for a while going forward.

Another yummy fast snack is refried beans and a cheese stick microwaved in a tortilla.

I haven't made quesadillas lately. I make burritos a lot.

Here too. Mostly burritos and enchiladas. That's what we use flour tortillas for mostly around here. I had these all the time when I was a kid. Not sure how they fell off my radar almost completely. They won't again, that I can assure you. lol

I have a fridge full of groceries and a crammed freezer but just in the past days I have been enjoying making thick Black Forest ham sandwiches on NY style rye bread sliced fresh tomatoes and a splash of Italian dressing,

Dementia is a terrible thing? Does someone live with your mom?
I haven’t had a quesadilla in a long time. Wouldn’t mind one right now.

Dementia is horrible. My mom currently lives in my sister's basement. Of course, that sounds terrible, but my sister's basement is a house in and of itself with two bathrooms, a living room and great room, two bedrooms, laundry room and full kitchen.

@lovebuglena Just a fancy name given to a room that is in addition to a living room. To me it's just another living room, but they have to give it another name since there's more than one. lol
The whole house is a three-story with about 2,000 square feet on each floor.

I'm glad you make your mom good things to eat.
We have tortillas in the fridge but I don't eat them. Pretty uses them in foods she makes for herself. I have been eating hot ham and cheese sandwiches once in a while for breakfast.
