Trying something new for breakfast

My eating has been off for several years. There are some days where I eat almost nothing and others where I want to eat everything in sight. What sounds good today doesn't appeal to me tomorrow. I worked hard at the gym for several years to lose 80+ pounds. I've lost almost a further 20 due to the eating issues.
Problems have manifested in several ways including hair loss, hair breakage, and pants/underwear that don't fit. I try to get more protein into my diet but again there are just some days where I can't eat. I saw this recipe for "breakfast stuffed peppers" on Skinnytaste this morning and thought they were a great idea. I like stuffed peppers in general but these are stuffed with veggies and eggs rather than meat and rice. Well they contain turkey sausage too but you know what I mean.
Sooooo I'm going to make them today. I'm just waiting on an Instacart order that includes the peppers and turkey sausage among other things. I already have a bunch of egg whites and spinach thawing from the freezer. I have diced onion and mushrooms sauteing as I type. I'm going to add some cottage cheese for extra protein and Penzey's Mural of Flavor seasoning.
It will be good to have a nice, warm, savory, and filling breakfast tomorrow instead of my usual fruit and Greek yogurt. I think it is going to be really good!
