24 days until spring. Looked like we dodged the s**w bullet. We only have a coating. I feel so sorry for the east coast.
Well, the first Monday with the new lady went OK. She works really fast and is more than eager to do anything I need her to do. We just need to get used to each other.
Big snafu in cousin #2's moving plans. She decided to cancel the moving company she had and go with one that had someone she knew connected with it. Big mistake. Her contract says that if she cancels on the day of the move she doesn't get her deposit back. They insist that it says she must cancel 7 days prior (she cancelled 5 days prior). She called a couple of times; and they ended up hanging up on her...another red flag. Our lawyer said that she will lose because they can claim that she changed the email. I wish she would have gotten something on paper. She is out $6,000; and the new mover is charging $9,000. So even with the money she got for the car, she doesn't have enough. She had to borrow $4,000 from me and is not going to have any safety net if something else comes up. I feel so bad for her; and she feels so stupid for not seeing all the red flags, especially when they wanted more money from her.. One thing...she had to come over to get the check; so I got to see her and the dog again.
Got the dreaded letter from the IRS about my Federal tax return. They need a Form 1310 completed and a death certificate for my husband before they can refund my money. Hopefully this can be completed relatively easily.
Breakfast - Granola bar
Lunch - Meals on Wheels - Chicken stir fry, rice, mixed veggies, peas, roll, peaches
Dessert/Snack - Nature's Bakery Brownie, low salt nuts, licorice jelly beans
Dinner - Turkey/vegan cheese sandwich, potato poppables, Bing cherries
What did you eat yesterday?

I doubt you will see that 4,000 dollars again. She doesn't seem like the brightest bulb. Yesterday, nothing of note really. Today I made a two ingredient tofu cheesecake. It takes tofu and dark chocolate chips. It doesn't taste very dessert..but I will probably be eat as I did spend the money on the ingredients and it's probably healthy.

@snowy22315 Fascinating recipe idea. No dates in there for sweetener?

@sallypup No, I guess you are supposed to get the sweetness from the chocolate chips. Of course the pic showed it being ultra chocolatey. This is more like milk chocolate and not as sweet.

She's actually very smart; but she let someone take advantage of her. She feels really stupid. If I don't see the $4,000, that's OK. She's in deep #### right now. The cheesecake sounds interesting. I'm not allowed to have dairy anymore; but I can eat tofu.

I ate the last of the chicken, mashed potatoes and biscuits Pretty made for breakfast yesterday, a slice of all-meat pizza for late lunch and had one of the hamburgers for supper last night.

My pizza is all gone; but I do have a vegan pizza in the freezer.

@LindaOHio I've only eaten a couple of slices of my pizza. I'm worried it will go bad if I don't hurry up and eat it. Or, I can freeze it again, I guess.

It was nice of you to loan her the money. I hope you won’t be too disappointed if you don’t get it back. I’m glad you got to see her and the dog again though. And I’m really glad the new lady is so eager!
I had chicken noodle soup, Chobani protein yogurt, and a pear yesterday.

Yeah, if I don't get it back, it's OK. She is in dire straits right now.

Oh I feel so bad for her.
I had a taco chicken salad at a Mexican restaurant along the way for lunch, and a turkey sub for dinner. An orange and fiber!

I feel so bad that your cousin got bamboozled and that the moving company is so reluctant to refund her the money. I know companies rely on that contract but at least you are in a position to lend her the money. Hope her move goes smoothly with no hiccups or extra expenses.
Once you get used to the new lady I'm sure it will be fine. It's nice to hear that she's eager and willing to do what needs to be done.

Oh, dear. Yes, she should have gotten it all on paper, I am surprised she didn't. That was very nice that you loaned her the money. Very kind of you. What worries me is that she has no safety net to fall back on. Can she work part time if she has to?
I am glad the new lady is nice and efficient. I hope you become friendly with each other. Can you call her if you need something at times? That would no doubt be helpful.

Always get everything in writing,
Especially with an amount like that
I do feel her pain, I really do.
Glad the new lady is eager to please.
That's a plus
