Happy Saturday Everyone! it's sunny but cold here today. Right now it's just above freezing.
While I'm having my coffee I was responding to notifications and reading posts and came across @Juliaacv saying she made banana bread. I said that I hadn't had banana bread in awhile and my mouth was watering. Not to mention how great her house must smell with that baking in the oven.
I forgot I had some overripe bananas that I was going to toss but now I'm going to make my own banana bread.
On a cold day like today, it will certainly brighten my mood, make the house smell so good and of course enjoying eating it.
Can't believe I was going to toss those bananas. Thanks Julia for mentioning your banana bread.
I love myLot

I try not to let my bananas get over-ripe but sometimes it just happens. After reading Julias post I thought banana bread sounded good and it wouldn't waste my ready to toss bananas.

@Marilynda1225 Glad to hear. I had a pretty "productive" day yesterday.

It's sunny and chilly here, too. We might reach 60F later this afternoon.
Banana bread sounds delicious but I haven't made any in years. I don't normally let bananas get ripe enough to make banana bread with them. I prefer eating bananas while they're still somewhat green. I like the pucker-your-mouth flavor of green bananas.

@Marilynda1225 Pretty usually takes the ones that are getting brown spots, cuts them up and freezes them for shakes and slushies.

I try not to let bananas get over-ripe but sometimes the whole bunch just ripens too fast before we can eat them all. I like my bananas really yellow and sweet. Whenever I get bananas that are still somewhat green I get annoyed that I have to wait for them to ripen. See, now if we lived closer I could give you my green bananas,

@DaddyEvil I used to freeze bananas for shakes but have totally forgotten about it. Guess because my blender is in the back of the cabinet and I rarely use it. But, with the nicer, warmer weather coming it would certainly be a nice treat for a cold, banana shake.

No I didn't put any chocolate chips in mine only because I didn't think of it. Now that you mention it, it does sound good so maybe next time.

You listed many good reasons for some banana bread. I second that opinion! Banana bread goes so well with a cup of coffee. And much healthier than the pastry I've been eating, lol. My wife makes banana muffins when she buys to many bananas, and some become overripe. I always look forward when that happens.

I like the idea of banana muffins and it probably would have been better than my loaf of banana bread. I'll have to remember to do muffins next time my bananas get over-ripe. They do go well with coffee

Bananas are weird since a bunch can all ripen at the same time and too many to eat before some get over-ripe. I'm glad I didn't waste my over-ripe ones and we enjoyed the banana bread.

We also have made some Breads in the past that used Banana.
Not in the recent past though.
At least above freezing means somewhat tolerable.
Have a great time ahead !!

Thanks for the mention, I'm sure that you are enjoying that delicious scent of the bread baking.
The recipe that I have was from Brendel's Mom, Carol and it was originally her grandmother's recipe.
I personally think that I could cut the sugar down 1/4 of a cup, I would prefer to let the natural sweetness of the bananas work their magic.

Funny you mentioned Carol. I think of her occasionally and miss her.
I'm really glad I read your post and we did enjoy our banana bread over the weekend. It was a nice treat.
