I had an idea to use up a banana for my first meal of the day today. We have always only taken 1 meal on Sundays as our activity level isn't as high as other days. I made French toast peanut butter banana roll ups. Yummy. But, when you use whole wheat bread, also very filling. What did you take to eat yet for today? ~Photo found online

Looks and sounds yummy. So far I've only had a granola bar. Will make something for brunch soon.

It was just me that ate them. My hubby cut back on his meal today, he had a couple of slices of Black Forest ham and an egg as a toasted sandwich.

We ate pretty light today but I'm looking forward to dinner. We're having burgers (no bun) with melted cheddar cheese and a thin layer of bourbon bacon jam spread on top. I tried it once and it was a delicious combo instead of my usual boring ketchup. Onion rings as a side

That sounds delicious. I have not tried a bacon jam although I have heard it is delicious. We had steaks, baked potatoes, mushrooms and glazed baby carrots. It was good, I love the way that the air fryer oven evenly cooks everything. We haven't used our outdoor grill in years. We found the food unevenly heated due to flare ups and we might even get rid of it this summer.

@Juliaacv I love my air fryer too especially how baked potatoes come out so nice and fluffy on the inside. I just bought some baby carrots so I'm thinking of roasting them in the air fryer, The bourbon bacon jam is delicious.

It was quite easy and quick actually. I cut the crusts off of some bread, flattened them with the rolling pin, spread the peanut butter and then took the banana and rolled it up and then dipped it into the egg mixture and into the frying pan.

French toast peanut butter banana roll ups. Oh my goodness You just wrote something there that says yum to me So is this bread , fried, with peanut butter and nana inside, and then rolled up when the base is cooked Or does it involve egg as well I'm there I really am

Yes, you lather peanut butter on the bread then roll up the banana in it, and then soak it in the egg mixture. I sprinkled cinammon on top of them before they made their way to the frying pan.

Wow, that sounds delicious! I had Cheerios for breakfast, and had some turkey and stuffing for lunch. I’m not a cereal fan, but it’s (Cheerios) supposed to lower cholesterol, and my last visit showed some cholesterol concerns. Seeing as I don’t eat a lot of cholesterol laden food, I’m trying a few other ways to help. It’s too bad I can’t do cardio because that’s probably the best thing!

Sounds interesting! I had an overnight Pancake heated and ate around 12 Noon. Then had a lunch with Rotis(Indian Bread), Vegetable of Cluster Beans, one Daal(Moong Legume) with curd. Now we are planning for our evening tea. Have a great time today !

I haven't had chicken fingers in decades. Wrapped in bacon would be good. I think that almond butter would be a delicious alternative.

I made banana bread a few weeks ago. I only had just the 1 banana that was headed towards banana bread ripeness, and no others, not enough for banana bread, but suffice for the French toast with the peanut butter and banana. I do not often buy bananas, they eithe ripen too fast or they stay green and then when you peel it they are mushy.

@Juliaacv - This is the same reason why I almost never buy bananas. I made a traditional French toast Friday morning for breakfast. I served with some berries and maple syrup, I avoid butter because of my husband health.

@LadyDuck I sometimes will put a little dab of maple syrup on my plate if I do not melt a bit of butter over them. I prefer the butter trick myself, but I can enjoy butter in moderation.

I had my Easter dinner with my son and his girlfriend. We had roast leg of lamg, cheesy au gratin potatoes with sour cream, and cheesy broccoli. Dessert was strawberry shortcake with angelfood cake and whipped cream.

Vince would love these but I'm not very fond of cooked bananas. It's sensible to cut down your food intake if you're not very active on a particular day.

I like them on toast also. But by the time that they made their way to the frying pan yesterday, they were pretty soft. I did not have enough to make banana bread, so thought this would do, and it kept me filled until suppertime.
