Busy Day

But Tuesdays usually are. I only got potatoes at the auction today. Which means work tomorrow. I got 3 five pound bags for 6.75. So I need to get some of them cooked to freeze. I am going to try making stuffed baked potato skins and see how well they freeze. That will be dinner tomorrow too 
. While I am doing that I am going to scramble some of the eggs to freeze also. I hope that works so I won't have to buy as many over the winter.
This evening we went to play euchre. We each won a game and spent a lot of time talking. Next week we are going to meet outside in the shelter house to play. The lady that opens the building won't be there and none of us wanted to be responsible for opening up. That's because LaRue is having a festival soon and the silent auction stuff is stored inside. They do have an inflatable pool that I might try to win. I need to look up the new prices.

Glad you had a good day at the auction. My evening was nice and boring, something that I won’t be able to say for the rest of the week. Since I’m having a filling done tomorrow morning, I won’t be able to say anything for a while tomorrow!

That's a great price. With prices go up on some things I would like to get a small freezer and start stocking eggs, meat, coffee and such higher priced items.

I used to break eggs in a bowl and whisk them, and freeze them to scramble. when I had extra eggs. I also make scrambled eggs with onions, chopped green peppers, etc. and fix them rolled up in soft tortilla shells. You can put cheese on them before you roll them up. I wrap them up separately and freeze them, they come in handy at times and are very good and fast.
Good buy on the potatoes. It sounds as if you had a very busy day!

I have thought about doing the tortillas thing and adding meat in also. In fact I think I have a few in the fridge so could try it. Glad they froze well for you

Sounds like a productive day, even if the auction was mostly potatoes! Stuffed potato skins sound really good, and hopefully they freeze well for easy meals later.

Wow! I always liked potato skins and loaded baked potatoes and such. I also like card games, though I never really got into euchre; my favorite regular card game is probably the twenty-one-related, blackjack-family games, but games with specialized cards such as Uno and Mille Bornes are my absolute favorite.
