Gluten-free strawberry cake

This is my latest experiment, and it was more successful than I expected!
I planned to make a sandwich cake, and I wanted Paola to be able to have some but she’s coeliac. So I used gluten-free plain flour in the recipe I normally use, but added a good amount of baking powder and also incorporated a bit of extra egg white which I had left over from making tiramisu at the weekend. Then I baked it in the usual way.
It worked really well, and if I hadn’t known it was gluten-free I could never have noticed, it was exactly like ‘normal’ cake. Sandwiched with strawberry jam, whipped cream and fresh strawberries it was totally delicious!

I eat gluten-free stuff occasionally. I think it tastes just fine, personally.

@Fleura - Sometimes something looks really good to me at the moment. Sometimes it just happens to be gluten-free. I don't specifically search it out, though.

Your cake looks delicious! Good enough to eat in fact.
I tend to prefer cakes made with wheat flour, but have tried the occasional gluten-free, with mixed results. These were from cafes, not homemade. I love a sponge cake, and strawberries, and cream, so I could definitely be tempted by your delights!

That LOOKS like what my first wife made and called strawberry shortcake. Hers tasted delicious but it wasn't the way mom always made strawberry shortcake.
Mom's strawberry shortcake was made with crushed and sugared strawberries spooned over the top of a single layer of sponge cake and left to soak up the strawberry juices before serving it.
