Mini Quiche

I gave in to the call of seasonal food and baked some mini quiche. Spinach florentine, which is pretty standard, but also sweet potato and uncurled bacon. Both were delicious. I prefer the mini quiche so I won’t have so much on my plate, but also because there is less crust to consume. The filling is obviously my favorite part, and I don’t want too much crust getting in the way. Quiche anyone? Mini or regular sized?

We love a quiche ….quiche Lorraine , and my Mom does a great one with broccoli, we used to have one with smoked salmon years ago…..

@AmbiePam yep. Last one Mom did was a couple of weeks ago …a mushroom one. I make one using cottage cheese, tuna, sweetcorn…..but no pastry. It’s delicious ….and there is no sign it’s made with cottage cheese.

Sweet potato and bacon sounds so good, I never would have thought of that combo. I'm team mini too, the crust to filling ratio is just better. Now I kinda want to try making some this weekend.

@ambiepam One of my favourites. My wife makes a lovely French onion tarte which is very similar to quiche. I don’t like there to be too much crust either, and the crust needs to be just right.

We prepare quitch with white flour especially on Holi, the festival of colors.It is filled with condensed milk and dry fruits.
