Reshaping my life

Bob does not eat pasta. I never ate a LOT of pasta, but enjoyed it occasionally. So I bought some this week.
I bought Barilla Protein Rotini, and jarred Alfredo Sauce. I know pasta is high in carbs, but this was a little better than usual. I cooked the pasta in chicken broth. Added in cheese that I had little bits of. Some blue cheese crumbles, a little "Mexican blend" grated cheese. I had chopped broccoli that I stirred in as well.
Tomorrow I will have a smaller portion and will chop in some meat. I do not want to cook complicated things. I do not really want to cook for myself alone. So I am reshaping my life to do it anyway. And eating different foods as well.
It made a good meal. It was comforting and creamy. I have more pasta left that I will cook and make into a salad sometime next week.
I got rid of my really big dining table. I have a little "bistro" table that is metal with two chairs. I can also put up a card table if I need to. If my daughter and her crew were to be here we have several folding tables and light weight lawn chairs if we need more than the four chairs I already have.
Cleaning closets, emptying drawers, rearranging furniture. Shaping things differently, trying to fill up how empty things feel with Bob so far away.

Your pasta creation sounds really good. I can imagine that it's hard to prepare meals just for yourself. Sometimes i have trouble cooking for just my daughter and myself.
Little by little everything will fall into place with cleaning out closets, etc. It can't be easy having Bob so far away

Such a tough time for you but it's good you're filling in the hours and getting things done. Sending hugs to help you along the way.
