What to make when it's Hot and very Humid ?

We are in the midst of a heat spell here. It should last only a few days. But I am trying to think of what I can buy to make as meals as it's soooooo hot here it's not safe for anyone to be outside for long periods of time. I do alot of cooking in my toaster/convection oven, microwave, stove top, and crock pot in summer as it keeps the house from heating up compared to the regular oven. So I'm trying to think of things I've made in the past or new things that I could make easily w/o being a frozen meal of sorts. So far I've come up with meatloaf (fits in my convection oven), meatball subs (I can buy precooked meatballs), bbq chicken sandwiches, baked chicken (crock pot or convection oven), stir fry's, salad, fried potato's and ham, chicken/seafood/tuna salad, tuna mac... What do you cook when the weather is hot and nearly unbearable?

I've been buying a lot of lunch meat to do lunch meat sandwiches and chips. Pulled pork is a good one for the crock pot. Put a pork roast in the crock pot all day and then shred it and mix with bbq sauce. I've also been doing a lot of hamberger helper meals lately as they're quick and easy for me to make before I go to work.

I love pulled bbq pork, forgot about that one. But it hasn't been on sale much here. And sometimes the fat content in it is too high and makes me sick. Lunch meat gets eaten too fast and never in sandwiches. Hubby totally hates hamburger helper but one can make their own versions which are just fine.

Oh yeah.. pork is expensive, even at Walmart! I go to a local chain called Wegman's. Oddly enough, they've got a giant pork loin for only $20, and it gets us 3 meals. I used to be able to get the same deal at Sam's Club, but then they closed the only Sam's Club near us. Shop around, and make sure to look at the large pack deals.. you can always freeze what you won't use right away.

I love to eat Chinese chicken salad when it's hot! Chicken either grilled or otherwise cooked with any type of green salad. Dressing is 1/4 cup fat free mayonnaise, 1 1/2 tablespoons rice vinegar, 3 tablespoons Sugar Twin, 1 teaspoon Dijon mustard and 1/8 teaspoon of sesame oil. I use a whisk to mix it up in a bowl then add the salad and chicken. Some rice noodles added to make it crunchy and it's a heavenly treat! It's a good, satisfying meal and very low calorie. Of course, you can substitute honey for the Sugar Twin, which is how Applebee's makes it, and regular mayo instead of fat free but I like the low calorie version because it helps me keep from gaining more weight. Cold pasta salads are good, too! Practically anything with cold chicken in it is great for summer.

I'd be curious on how long sesame oil and rice vinegar would last. As I wouldn't picture using the vinegar very fast. Sounds like a plan otherwise.

I like to make tuna salad, chicken salad, or ham salad when the weather is really hot. Chilled vegetables such as fresh tomatoes, cucumber, carrots, etc. are also good choices during hot weather…

Two things I make are Pizza Bagels and English Muffin Pizza. You can cook them in a conventional oven easily. The great thing with these meals is you can add an kind of vegetables, meats and other toppings you choose.

That is true those are good and fun to make... provided the kids don't inhale the cheese and pepperoni before i get to making them which seems to be the case many times.

I do like you also and try and not use the oven and or too much boiling when it is so hot and humid. Though I must admit there are a few things I have made regardless of the weather simply because I wanted to eat them. lol But I do a lot of grilling as this way on our terrace we don't get all the heat inside the apartment. Quick pasta meals also so that even while cool we can enjoy them as salads also.

I know there are a few things that you just don't care and will make regardless of weather. As you are not too far from me so you know my pain when we get those super hot spells in summer.

Meatballs can actually be made in a crock pot and they really come out really tasty too. Lunch meat is a good idea if you are not watching your sodium real closely. If you are then you will need the low sodium type of lunch meat.

That is true porkupine meatballs are quite tasty to make in the crock pot.

My state has been in the 100s for two solid weeks now. I can't find anything to cook that doesn't make me hot. I just drink water and try to stay close to a fan. Because the air conditioning isn't even cutting it. I still cook for myself, but mostly on the stove top. I do not want to use the oven if I can help it.

Oh how I hate heating up the kitchen on a hot summers day. I have a gas stove that keeps my kitchen hotter than the rest of the house anyway thanks to the pilot light. I bought a bunch of lunch meat the other day and we have had sandwiches a lot. I am actually getting sick of lunch meat right now. Cooking out on the grill is one thing that I love to do when it is too hot to heat up the inside of the house.

Since I live in a motel, I am limited to what I can cook in a microwave oven or a slow cooker. I also have only a small refrigerator so a lot of what I eat comes out of a can except for the few times when I have made a soup or stew. I think sandwiches or salads would probably be best since a lot of times those don't need to be cooked at all. When it is hot, I don't like to eat hot things.

I love the crockpot, and I also do some things in the microwave. I have a ton of crockpot recipes as well as stuff that you don't have to cook at all - salad, or sandwiches (cold ones).

It is very hot and humid where I live and I hate turning on the oven for extend amounts of time because it makes the house hotter so I usually make sandwiches and chips and another easy thing to do is to get the taquitos in the box at Wal Mart and fry them in a pan it is quick and easy and make some pico de gyo for the top of them and add hot sauce and wala you are done1!!

Oh, we do soup and sandwich or picnic stuff like cold sandwich or hotdogs with cold sides like potato salad and/or coleslaw. Egg salad Liz makes at least once a week for side or sandwich..Things like that..Enjoy!

If one does a search online for microwave recipes they can find many good ones, fish, pork, chicken, beef all cook up well in the microwave if properly prepared. So pull up a search engine and see what you might find that you will like!

Meat cold cuts, salad, fruit, cold cooked vegies, more salad, cold soups and very good bread. We eat cold cereal for breakfast and sometimes for supper. Cheese and cold dipping sauce are good nibbles.

I have bee letting sharon cook these past few days. She has made steaks a few times. chicken in the oven because she likes the heat. Also some ox tails made by me.
