Leftovers for dinner

Tonight I didn't feel like cooking a fresh meal because I didn't get home until later than I had planned and the chicken that I had gotten out to thaw was not completely thawed. This was a leftover meal from the other night. Do you ever use your leftovers to provide as a later meal? Or, are you able to always prepare the right amount of food and never have leftovers to worry about? For me, I think saving leftovers and reheating them on a day that I don't feel like cooking from scratch is a great alternative. It is also a great way to save money as well because of the fact that we are not wasting food if we use it for a later meal.

I've become an expert on judging how much food to cook for dinner so that we'll just have enough for dinner, and packed lunches for the day after. Of course when it's a favorite of the kids, they don't seem to mind when we re-heat the food the following day and have it for dinner again. Not only is it a great way to save money, it also gives me a break from cooking (which I can spend doing other chores).

The break from cooking is always something that is really nice. As my children have gotten older, this has become something that has been increasingly important to us because the kids are getting more involved in after school activities and that does mean that there are times that we don't get home for the evening until fairly late and that does mean that we'd end up going for fast food if I didn't have leftovers in the fridge or freezer that I could just heat up.

Often I make dinners with the intent of having leftovers so I don't have to cook on another night - ha ha! I love having leftovers - even if it's a little - because it can be lunch for my kids the next day - or a lunch/snack for myself (it's nice when something is waiting for me in the fridge - instead of having to scrounge around or make something during the day). Not only does this save some money - it saves me some time!!

Isn't that just the truth. I will always save leftovers for myself to eat the next day while the kids are at school if there isn't enough for everyone to or even half of us to eat for dinner on another evening.

Dorannmwinn I agree with every thing you said in your discussion. See I don't think every one is able to cook just the right amount of food and not have left overs ever. Also I don't think everyone comes home from work at exactly 5 p.m. or in enough time to cook or isn't tired from work everyday and can cook a fresh meal everyday. Now my grandmother used to come home from work and cook just about everyday but she also always had leftovers. Left overs is a good idea because it may not be as fresh as the day it was cooked but as long as it is still fresh enough to eat then it is food in your belly. Also it does save time on cooking when you are running late for something and it is good when you are too tired to cook. Also it does save money on going out when you can't afford it much. It saves food from being waster and it's at least food to eat which is better than not eating. I know some people that if the food isn't finished that day for that meal they throw what is left out and never eat left overs and that to me is a waste of food. There are people in this country and others all over the world starving so be glad you even have left overs to eat. My hubby and I eat left overs all the time and are perfectly happy with it as long as they are still fresh enough to eat.

Sometimes my hubby will say we dont need to go out and eat we have leftovers lol. And sometimes we go to my sisters and make a new meal out of leftovers they have when hubby cooks for them lol. and fried chicken tenders sound so yummy. love it tho when hubby makes alot of corn chowder or steak chili and freezes it. hes an executive chef with the aramark company so hes quite the chef used to work at the ritz hotel in our town as a chef and he can do so many gourmet meals and things that we save alot of as left overs because he makes way too much all the time when he cooks lol. and sometimes he comes home toot ired to cook or in too big a hurry for domething that we dont have time to cook so left overs we eat. and i always say id rather eat leftovers than never eat or eat the same food for the rest of my life rather than not eat because i know too many people in this life are starving so im thankful to have food even if it is leftovers. as long as they are fresh enough to still eat i will.

I agree with you. I definitely consider myself to be lucky that I have food to eat every day. I've never had the unfortunate experience of knowing hunger in my life and I hope that is something that myself and my children never have to go through in our lives.

That is the same way that we are. I made southern fried chicken tenders for dinner tonight and we didn't eat it all so I'm going to be freezing those and then one day next week all I will have to do is to reheat them in the oven and make a fresh side to go with them and dinner will be ready. That would probably be a good idea for next Wednesday since it is Halloween and I'll be taking the children trick or treating that evening.

hi dear dorannmwin we are only two persons here, hubby and me and I got to say we only rarely have leftovers. During the week I am home too late to cook so its a sandwich when I get home but we cook on weekends. If we have leftovers I freeze them too, your post just reminds me we still have one generous serving of chili con carne which is frozen. I made a big pot of soup today which we will enjoy later for dinner when the flavors are nicely blended, and if we have leftovers from that I will freeze them for sure. Plus I browned all the ground meat and onions together and then put half of that mix into a container for freezing and later use.

I do think that it is always nice to brown up enough meat for more than one dinner when you can. When we go shopping at Sam's Club I will typically freeze half of the ground beef raw and then I will brown half of it and package that into individual meal sizes so that I am able to make a homemade dinner at home quickly on the nights that we are especially busy.

I've never made my own beef stock, but that definitely is a good thing to keep handy because it will make future cooking a little bit easier.

woohoo we HAD leftovers from that good soup I mentioned soooooo we have another one person meal or to be used as a split entree for two in the freezer. Yummmmm. I also like to prepare home made beef stock so thats in the freezer as well.

Yes all of the time. There are some things that I do not keep as left overs. Right now hubby is working a full time job at the mall so I do lot of left overs or bring home food from my parents house.

Yes, there are a few things that I don't save, such as the veggies that we will have as sides if they aren't prepared with the meat. But when it comes to those things, I tend to prepare less than we should need as opposed to more than we will need so if there is any extra there is less waste.

Pasta I will keep because I tend to believe it actually tastes better the second time than the first time. But I also think that is something which all people have their own opinions on.

I don't keep all veggies either some I will and some I won't. I don't like keeping pasta because most of the time it doesn't taste good reheated up. Yeah I know I can be picky when it comes to food like that.

I always make use of the leftovers to prepare for later meal its kind waste if I don't.I love to make some fried rice when rice hasn't finished. For some dishes I just reheat for next time meal. I think its kind of practicality make use of the left overs for us to save a little.

That is another thing that I've taken to doing as well. I will cook up a lot of ground beef and I will use some of it for the meal that I was planning for that evening and then I will use the rest for a different dinner a few days down the line. I made a huge roast and then I used the leftovers to make a vegetable beef soup and I used some of my leftover ham to make a pot of soup beans that I served with cornbread.

Personally there are many times when we cook something that we try and make sure to have enough for left overs, or will cook me something for my lunch that will last me a couple of days. Usually this is an added bonus for helping you plan and save some extra money as well.

It is definitely a great way to save money. I remember there was a time when my husband went out to eat every day and that was costing between 30-40 dollars a week. Now that I'm doing better with planning, he is only spending about 10 dollars a week and that is simply because of the fact that he wants to eat out once a week.

hbi dorannnmwin when I was cooking for myself I often used leftovers and put something else with them and it was new and really tasty too. So often I froze some leftovers then reheated and had lots of meals from them.Saved money and also it made me find new ways to make leftovers into good tasty meals.

It really is something that I enjoy doing. I love being able to make a new meal in a short amount of time simply because I had fixed too much of something else to start with.

We usually have our leftovers for lunch the next day and try to change it up a little so it doesn't seem like the same meal. We we had noodles for dinner we might make the same meal with rice for lunch and maybe bake it with chesse in the oven.

When it is just a smaller amount of food that is left I will use it for lunch in the coming days. However, those times when I have a lot of food left, I would much rather save it for part of a dinner on a night when we are on the go or where I just don't feel like cooking.

I often eat leftover because it is difficult to cook for just one person. Besides I always like to cook more, just in case someone comes. Usually there is leftover soup or cream when I make one. As I cook a piece of chicken for the broth, it`s always more than just one dish. I also make some saiuces specially in bigger amounts and I freeze them placing them as flat as posible in a plastic wrap so that I can defrost them by just placing them in lukewarm water.

All sauces are very easy to make. There are two main ones: the ones that have fried diced onions to begin with (and there you can add meat, mushrooms, tomatoes, you name it) and the ones that have a white sauce to start with (and you can add there diced bits of chicken or cheese or mushrooms). All the sauces with no milk can be frozen.

Unfortunately I don't really know how to make all that many different kinds of sauces. However, if I did I would probably be inclined to do it the way that you have described so I wouldn't always have to go to the hassle of making sauce every time that I wanted it.

Its alright to keep left over for the next meal specially for dinner and we just put in int he refrigerator and have it for the morning, we normally just preheat it again, though most of the time we only cook enough food for us though if you have big family its really hard to estimate on how much food you will eat than just the two of you like me and my mother.

Well, my opinion is that if you get it in the fridge soon after you are done eating then you have several days to eat the food. With that said, I think that it is great to hear that there are many other people that are willing to use leftovers instead of wasting them.

hello mylotter, you are correct. Left over food should not be thrown out of the house. As much as possible cook food only enough for your family for that day, so that there would be no left overs. But if ever you have left over foods, we can re heat them for next meal specially if you feel a little bit lazy to cook, lol! Or we can make it a different meal .

I have never found it for me to easily be able to cook the right amount of food for the four of us and I hate ending up short so I will cook far more than what we need for a given night and save the leftovers for use on a day that I just really don't feel like cooking.

I don't see why eating the food a day or two later is not healthy to eat. All food doesn't have to be consumed as soon as it is prepared or purchased.

I had a friend during my undergrad studies who would throw away any left over food from the night before, it seemed like a huge waste to me. It also was a waste of money when you think about it. One time, we had a huge party, there was perfectly good roast and pizza and such left over. Woke up in the morning since I slept over, went to the fridge, there was nothing there. Asked him about it, and he goes: "Oh I don't eat left overs, let's go get some fresh food." Fresh? Hmmm, the food left over was still virtually "fresh". Just seemed pretty pedantic to me. Maybe it's just me?

Sometimes, I put it freezer containers for us to have in a hurry. Other times, we may have something 2 days in a row, but the second day I try to add something extra to it. I do try not to throw out anything.

I haven't been able to adopt the habit of eating the same meal two days in a row, but I have recently adopted the habit of repurposing my leftover food to make a different meal later on.

I think it is good to have leftover meal and leftover meals help to save money. I do keep the food in the fridge and reheat them and then try to eat them. I also think it is a great way to save money.

I do leftovers whenever I am tired. Now that the cold weather will be setting in soon I will make a lot of soup and freeze it. That way if I am sick Randy can pull out a container of soup and we can heat that up for dinner. It is a great alternative so you can save money by not eating out. I know when Randy was working he would bring in sandwiches to work so he can save money by not visiting the drive thru window.

I've already started to do soups again even though it hasn't really gotten all that cold yet. The reason is that soups are a great way to repurpose our leftovers and they are also something that is very easy to make.

I almost always plan bigger portions than I know we are going to eat, so i can have the leftovers at lunch the next day. there are some nights where we are all busy and do not have time to cook, so it is either sandwiches, or leftovers.

If we do end up having a small amount of leftovers, I will save those so that I am able to eat them for lunch the next day or the day after. If we have a larger amount of leftovers then I will save those leftovers for dinner another day down the line.

It is very rare that the food I cook for a meal gets finished. I always have some leftovers to put away in the fridge. And having teenaged siblings living with us, we all know that they are not particularly fans of foods that have been served on the table twice. So I have this thing every Friday to fix something out of all the leftovers or stuff that are going to expire soon in the fridge and come up with something new. Like if I have some greens that are about to get soggy and some leftover fried chicken, I will try to make a chicken salad. Or if I have some leftoevr meat I will try to make a sandwich out of it. It is a hit and miss but since I'm the eldest they can complain all they want but they will still eat it.

Just like you I have taken to repurposing things. I've made a roast into vegetable soup and I've made soup beans and corn bread from the leftover ham when I made the ham and green beans. It is a great way to save hassle down the line and it is also a great way to make sure that we are not wasting food.

That's what I mostly do too at lunch. I just re-heat the leftover food from last night. I normally cook at night co's there are more people eating at night than during lunch time. Sometimes... it's just me and my baby so I don't bother cooking food but at night... there's the whole family. Totally... leftover foods are money saver food. I always try to cook more amount of dish than just the exact thing. I'm hoping that there is a leftover as always co's I needed it the next day. Cooking twice a day is quite tiring too specially in my kitchen which there is no fan in there... so when I cook I sweat a lot too.

I typically only cook dinner as well because there is no one at home during the day except for me (the kids are at school and my husband is at work). However, everyone is at home at dinner time so I make sure there is something that is good for all of us to eat.

Oh yes, there are times that it is definitely disappointing when there aren't any leftovers. Tonight I cooked just the right amount for our family, so there isn't any prepared leftovers. However, I did buy extras that I didn't already cook and since it was a quick fix I can just heat up some more of the same thing for lunch tomorrow or later in the week.

Actually I was hoping that last night sister has when she cooked there was leftover food. But when we come home there was nothing but rice left. If it were me who cooked last night definitely we still have some food for lunch now. But now... since it almost lunch time here and there's no food and there's lots of people since it's a holiday today means i have to cook.
