Fluffy, happy, comforting post

It's a bit chilly today, the sort of day that requires comfort food. I made a baked mac & cheese. I didn't have elbows, so I used ziti. I didn't have a lot of cheese, so it got a blend of monterey jack, cheddar, mozzarella and queso blanco. It tasted strangely nice together. I didn't put the tree up again today. I might have to relent and put it in the living room, though there is no room for it in here. Still, it would be faster than rearranging things to make space elsewhere. I fooled around with a skein of fluffy yarn. It's got pom poms on it. I think it will work well as a trim. Now to make something for it to trim. It's been a fluffy, happy day. I haven't done much of anything. The trash men came and took away all those things we threw away. The Boy went down to apply for his first job. He's feeling very good about it and so am I. I think it will be a great step in his life. It's so weird to see him growing up. He was such a little baby, so tiny. Now he's the tallest member of the household. And the mac & cheese was so filling, I doubt anyone will ask for more food today, but if I feel energetic, I might make an apple pie. More comfort food. What's your favorite comfort food?

I feel the same way when people talk about mince meat, just what the heck is that? Is it like a chicken pot pie?

@rebelann Minced meat is ground beef. Mince meat contains no meat, it is diced fruits, spices, etc. Yummy.

@jaboUK Pasta comes in 7,842 shapes. Well maybe only a few hundred, but definitely enough to accommodate any pasta dreams you may have. Most people use elbow macaroni for that dish, but I often use ziti or penne or whatever is handy as long as it is tube-shaped.

My 'comfort foods' are Cottage Pie (preferably made with ground beef, bacon and tomato, with some diced carrot and other vegetables and topped with a creamy mashed potato) - either hot or cold; Macaroni Cheese (I often include some tomato passata in the sauce and top with some sliced tomato) or some kind of bean or lentil dish - anything from baked beans through bacon and lentil soup to tarka dhal (mixed yellow and red lentils cooked till they fall apart and tempered with whole spices and chili fried in oil).

I make Shepherd's Pie with ground beef, but I don't usually put tomato in it, that's a nice idea. Do you put cheese on top? I like it with cheese but The Man prefers it without.

@Rollo1 I sometimes put cheese in the mashed potato and/or top it with grated cheese. I have been known to flavour the mash with other things too, like a crushed garlic clove or finely chopped spring onion (goes well with the cheese). Sometimes I'll 'extend' the beef with a can of beans. That makes an excellent (and very popular) pie, too.

I know most of those cheeses but have never heard of queso blanco. I know that it literally translates into white cheese, but it is a term that I have never encountered before.

The info I find says it is soft cheese, but this isn't very soft, that is, it's grated. So it must have a lot of variations. It's usually included in a Mexican cheese blend that I buy.

My favorite comfort food is probably mashed potatoes, but it is bad for blood sugar levels, so I only get them on a very rare occasion.

a good thing im on 1000mg Metformin morning and evening as we have mashed potatoes here a lot but my blood s ugars are reallu good could be the 25 pounds I lost too.

I am comforted by your comfort post - it felt like it was the weekend (oh poop it's Monday!). Food is my comfort - any of it will do but a big one would be rice - throw me some meat and veggies of any kind to go with it and I'm good .

Skettie is always a comfort food for me. But today I was invited to the Village Inn and I had chicken enchiladas, that was a nice change from skettie. Hummm, chips n salsa n sour cream are pretty comforting too. You sharin that apple pie?

I didn't make the pie, perhaps tomorrow. Grocery delivery isn't until Wednesday, we are going to need something tasty to see us through another day.

Simple home cooked food is the best bet for me. I do not like market food because we just cannot be sure about its hygiene and quality.

I can feel how comfortable you are this day . You made me crave for a baked mac too reading your post . Though , i am not fond of cheese so just a bit of cheese will do . But my comfort food on a rainy day is an arroz caldo . A boiled sticky rice with lots of chopped green onions and chopped roasted garlic and chicken fillet . So yummy on a rainy day .

Making spaghetti is hard without elbows. Um, on another note, macaroni cheese is Dom's number one favorite food. We limit it to three times a week so he gets something like a balanced diet.

Wow, he really likes mac and cheese. But I have noted that their favorite foods when they are young, the ones they will eat every day for months on end, usually end up being something that they despise when they are grown. I guess they just have a quota, they have to eat it a certain number of time and then they're done.

I LOVE macaroni cheese! I discovered a pub which sold macaroni cheese burgers {they were to die for!} and now I can buy mini macaroni cheese bits from the freezer in Tesco. Yum. But my Mumsy's homemade macaroni cheese when I was ickle was the best.
