Again with the Reuben Casserole

I wanted to make a casserole similar to the Reuben casserole to share with my dad (85) and his wife (93). Grandma Charlotte as we call her eats very little, especially not meat. I was concerned that she might have trouble with the corned beef or pastrami. As people age they also get bored with their food and tend to not eat very well. Dad and Charlotte are still in their own home, doing for themselves and each other. So I substituted a few things. I sauteed some thinly sliced onions and some mushrooms. In the casserole I did the cubed bread. Then topped it with deli slice ham, shredded colby and jack cheese then the onions and mushrooms. I saved some for the top layer with the bread crumbs. The liquid I used had miracle whip, mustard, eggs and milk. It was delicious. Charlotte at two small pieces. I enjoyed making a ham sandwich casserole. I made the Reuben casserole for Sunday at noon at my brother's house.

Sounds tasty. My Mom is 94. When she lived with us we found her likes and dislikes up and down. She's eaten sauerkraut all her life. We were at a cafe- she told the waitress how she hated sauerkraut! She used to hate avocados but ate slices fine when I set them out.

Charlotte makes a sauerkraut salad for some of our gatherings. I was more concerned about the meat as she very seldom eats meat or eggs.

Hmm so Charlotte does not eat meat but she ate this casserole? Did she pick out the meat as I would do? I have been a vegetarian since I was 7. I am 32 now. It can be tough finding things fun and healthy to eat that are yummy. I am always looking for new recipes to try out. Last night I made a Tortellini broccoli salad that I am going to go try out in a few minutes. It has broccoli, cheese tortellini, sunflower seeds and raisins. It has a dressing of apple cider vinegar, sugar and mayonnaise. I am the only one in this house that will eat it so I hope that it is good haha. I will be eating it for days.

She is not opposed to eating meat, but most of it does not settle well with her. The ham in this was very thinly sliced. She complains of some things feeling heavy when she eats them. She seems to be pretty frail. Your salad sounds very good. Hubby would not eat it, though, because of the tortellini.

@GardenGerty The tortellini I like but the dressing ruined it. I wrote a blog today about it. I would never make it again. I was so grossed out while eating it that I am not sure I can finish it lol. It was pretty expensive to make so I am upset about the waste.

It did feel good to see her ask for a little more. She eats vegetables well and has been a great cook over the years.

What a great idea! Unfortunately the corned beef they sell here is in very tiny cans and has a lot of MSG which I avoid.

The sodium is part of the reason I used ham for their casserole. Any sliced meat, even uncured, would work well.

Yes, she usually eats about half of what she puts on her plate of the main dish. They eat lots of salads, and she always has a dessert.

I'm glad she ate some. It sounds good. I like the fact it doesn't have saurkraut in it. I obviously don't know how to spell that word.

@petatonicsca I have a few sneaky words as well. Weird is one of them. @just4him the sauerkraut is good in the Reuben, but this ham sandwich dish was very good. Charlotte especially liked the sauteed mushrooms.

Sauerkraut. (Just checking my spelling.) I can never spell the word "license" correctly the first or second or third time. I also have to think about "tongue."

That sounds good. My old people pasted last year. He was 86 and eight months later she passed at 93. My old people ate everything and so much! neither was fat though.

Your Reuben casserole certainly has become a hit. I like your idea of switching it up and using the ham. Bet it would be good with turkey and Swiss cheese

I know at the nursing home they would serve very small meals. I guess older people don't need too much nourishment but my mother always had a very hearty appetite. It is good of you to go to so much trouble with a meal for them.
