but Pretty and I have been wanting barbecue chicken for several days, so I decided to see what I could do with chicken, barbecue sauce, mustard and a roasting pan in our oven.
About an hour and a half into roasting the chicken Pretty started asking me if it was done yet.
I told her to give it another hour and I would check it...
I just pulled it out of the oven.

I generally roast or barbecue the chicken first, and then brush the barbecue sauce on at the last minute.

@DaddyEvil We actually got a bbq last year - it was Hubby's new toy! And he's the master of the grill in this house (me, I don't touch it). He is enjoying it (except for the clean up after wards
), and I am sure he would happily fire up the grill for ya but of course we'd all come over there
.
Oh those sides sound perfect!

@much2say Yeah, cleaning the grill was another thing I hated.
Cooking it in the oven means I can just throw the pan away when I'm done.

And burn my hands and blow smoke in my face... *sigh* That's the reason I hate to barbecue.
Of course, if you want to come over and do the work, I'd be happy to eat real barbecue chicken from a grill.
I made fried green beans and had store bought rolls to go with it.

@DaddyEvil I would surely like. Tonight I am making a Bourbon steak with bulgur and sauteed bell peppers.

@LadyDuck That sounds very good!
Last night before we went to bed Pretty put a chicken casserole into the crockpot. It was done when I got up this morning so I ate some for breakfast. It was good, too.

Hmm... that sounds delicious, too. I haven't made ribs in years. I should probably look into doing that. Thank you for the idea.

@DianneN It came out very well. I ended up having to use a spatula to get it out of the pan. The pieces kept falling apart when I tried to use a fork to lift them out.

@DaddyEvil oh wow I see I wouldn’t use it then either. I used to have a really hard time around smoke as a kid. Probably due to asthma.

It was delicious... I hate to barbecue because I always end up getting burned and having an allergic reaction to the smoke from the grill. Then I have to clean the grill afterward. It's just not worth it to me.

It is, thank you very much.
There is still plenty left if you and the furbabies are hungry... But it does have barbecue sauce on it.

So how was it then? Did your cook it at a lower heart? That seems like a long time to roast smaller pieces.
I hate to barbeque outside when it's cold out. I'm hoping my grill gets used a lot this spring/dinner/fall since I just bought it last year. We went without for the last eight years.
I'm doing chicken for supper tonight but not sure yet what I will make with it.

It was really good! I'll add a photo of a piece I pulled out of the pan for Pretty and I to try. It kept breaking so I finally used a spatula to get it out of the pan.
Yes, I cooked it at 300 F. Slow roasting is the best way to cook meat, in my opinion. The house smelled fantastic about an hour into cooking it. (That's why Pretty started asking if it was done.
)
When we moved in November 2019 I threw our grill away. I was tired of getting burned and getting smoke in my eyes every time I grilled outside.
Hmmm... do you like Shawarma? I've been making that once a month or so for the last two years. I make a huge batch of it and then freeze single size servings in Ziploc baggies so we can just pull one out and heat it up in the microwave.
Edit to add: I forgot to add the photo so had to come back and do that.

@DaddyEvil it sounds good and fairly easy. I will have to make a note of this.
What are the seasonings. And do you marinate the cuz in the yogurt and freeze that too or just get the onions and peppers ready and do the cuz on the day your cooking it?

*sigh* I am allergic to smoke, so end up not being able to see by the time the chicken is done. I always burn myself while grilling, too.

@DaddyEvil The taste is all that matters to me. And if it is less of a hassle to cook in the stove, go for it.

I'm not a barbi (bbq) girl lol. But I love barbecue and always roast it in the oven. So much more tender and high heat will darken it just like on the grill. Only thing missing is that smoke flavour but a few damp wood chips will take care of that.

Oh, really? I didn't know high heat would darken the chicken but we did get it really tender by slow cooking it.

@Namelesss I've got one of those pans but got tired of having to scrub it clean so switched to disposable aluminum pans several years ago.
I take it out and cut the thickest piece of meat to see if it's done yet. If it is I take it out, if it isn't, back in it goes.

@DaddyEvil I have a black roasting pan. One of those speckled ones. I roast for a couple hours and take it out when it 'looks' roasted or grilled. It's always tender, something you don't always get on a grill.
