Do you like Eggplant Omelette?

Good Morning/Afternoon/Evening to all my dear mylotters
I woke up in a very nice weather. Sunny and cool air. I had a great morning walk and a dancing exercise. 
Today, I will just prepare a very simple and easy dish. Eggplant Omelette. You just have to grill first the Aubergine (Eggplant) to remove the skin. Then, mix the beated eggs and fry. I eat it with garlic fried rice

@vandana7 I mashed it lightly then mix it with beaten eggs, sprinkle it with salt

@iloves88 Yes. It is very tasty just don`t forget to sprinkle some salt when you mix the egg and the eggplant

You eat too much rice. 
I've never had omelet with eggplant. I do eat eggplant but wouldn't have thought to add it to an omelet.

Yes, so delicious. I just don't have fire to roast the eggplant. it is more delicious that way than just putting on the stove.

@Mavic123456 Yes. You just have to be careful when you mashed the eggplant and mix it with the beaten eggs and fry it at low fire
