Scrambled Eggs

It is almost difficult for me to write about scrambled eggs considering the price of eggs these days have literally flown the chicken coop. I will still buy them at a fair price, otherwise I am leaving them in the store. That just means, I am buying many less eggs than I used to until the price comes way, way down. Right now I am willing to pay no more than $1.99 for a dozen. But I do love scrambled eggs, and rarely have them without something added in. Usually I will pick some sort of meat to add like bacon, sausage, hot dogs, ham or something like that. I almost always cook onions in as well. Often times I will add a pepper like red, yellow, orange, or green. Sometimes I like to add in mushrooms or potatoes. Sometimes I put all of the above in them. Oh, and cheese. I always like to add shredded cheese to my scrambled eggs as well. It's almost a must. And I make them in rather large batches. Usually 8-12 eggs depending on the time of the day I eat them. And if we don't eat them all? No worries. They make for fine leftovers to take for lunch at work or just have for a snack later on. Or I can make breakfast burritos out of them and add a little salsa or avocado or both. I often like to drizzle a bit of ketchup on my scrambled eggs too. That's just good eats. How do you like your scrambled eggs?

@NJChicaa Since you do not like ketchup on your eggs do you put salt or pepper on them? I like ketchup on things and on eggs to me it is tasty.

@porwest I have to agree with her. Ketchup just doesn't jive for me on eggs in any form. I've often wondered why, I know people like it that way. I do put fresh chopped tomatoes in omelets and love them that way. But ketchup, no. I love tomatoes and put them in a lot of my cooking, but I am not a fan of ketchup.

I like scambled in butter, not overcooked, still a bit soft, sometimes with cheese.

@porwest my daughter loves eggs too so when we cook a big breakfast I eat everything except the eggs . I don't know where my dislike of eggs comes from but even as a young child I never like them.

@porwest I had never had scrambled eggs. I never made them. I think ketchup would be good on them. It sounds like all you had could be what one puts in an omelet. An omelet is what I can make but have not made in ages. Sounds like you have the leftovers in control and have ways to deal with them.

@porwest sometimes I have made an omelet but never made scrambled eggs. When I have made an omelet I also put ketchup on it. I keepkosher and put different things on my omelet.

I prefer cheese on my scrambled eggs. But many add ketchup. We are all different.

@porwest I understand it is actually becoming a 'thing', even in more urban settings - as long as its only one or two and there are no roosters! **goes off to price chickens and coops...

Those look really good. I paid about $4 for a dozen of cage free brown eggs this morning. I just like the brown ones best for some reason.

@porwest They have not gotten too high here in Oregon. Maybe we didn't have as much bird flu as other states.

@JamesHxstatic Anything over the 69 cents per dozen I was paying a year ago is too high. lol. They have been running between $4 and $9 a dozen depending on where you go. Honestly, I have never paid over $2 a dozen ever in my life.

I used to like getting farm fresh eggs. These days I just opt for the standard regular store ones. They have all gotten terribly expensive though.

Definitely with cheese. Bacon if I had some. I used to make scrambled eggs every Sunday for my hubby. When we had dogs I would scramble an egg just for them. They were nuts for eggs.

I sometimes don't know how people make their scramble eggs flavour -- I mean, eggs, salt, onion. Still don't feel good to my taste... Gosh. I'll just buy outside then.

@porwest Unfortunately I can't eggs always. If I eat more than 2 days straight, I will cough and sick for sure. As if I am egg intorerant.

I do like bacon with my eggs. Heck, I like bacon with just about anything. I don't make it often simply because it is so expensive. But I always have a package or two in the freezer, bought on sale of course.

I love eggs. At $4 a dozen here, still cheaper than many things. Other groceries have gone up so much more. So, eating as much as ever. I do like ketchup on scrambled eggs too.

I have pretty much stuck to my threshold prices throughout this inflation. If something costs more than my threshold price, it stays on the shelf. Eggs are way beyond my threshold price and I refuse to buy them.

I like runny sunny-side ups. Runny scrambles are fun too. Imo, the best thing about eggs is how you cook 'em. Like, there's just a ton of ways to fry an egg. You can get the bottom part seared brown with the yolk runny, all cooked evenly, or have cheese and onion leaves sticking on the top. I like cooking eggs with chopsticks because it makes things a little harder while also letting me pick up the eggs and fold it over even though it's a sunny-side up! Still though, can't imagine not having eggs for breakfast. There were times when they got too expensive here, I had a hard time trying to get my egg fix! :(

Oh, don't get me wrong, I like eggs just about any way you can cook them. It's just good eats. No doubt about it. I still only eat eggs about twice a month at best.
