With my kids being home today, I made them a nice lunch. No bready cheese pizza or disgusting mini hot dogs from school . . . they enjoyed their home meal. Fried rice, tempura shrimp, and some edamame (soy bean pods) . . . with a bowl of udon (Japanese noodle soup) with more tempura shrimp. Does it sound like I spoil my kids? Truth of the matter is, I needed to clear out the fridge . Fried rice: leftover rice, egg, and some ramdom bits of vegetables. Tempura shrimp: frozen - we normally don't eat this - but now there is more room in the freezer. Edamame: leftover from the other night. Udon: one remaining frozen pack of udon noodles Udon soup: easy: water, soy sauce, mirin (like a sweet rice wine), green onions. More tempura shrimp: used up the rest of the package. No extra shopping trip for this, less leftovers, more room in the fridge/freezer, happy tummies ! How was your lunch today ?

You might spoil your kids a little bit. I ate a slice of Shepherd's Pie a few minutes ago. I'm awake early today so may still take a nap before I'm ready to get up for the day. I hope you and your family have a wonderful day.

I love tempura, shrimps but also vegetables, this is something I really enjoy. I made a risotto for lunch, a risotto with pear, Gorgonzola cheese and walnuts, good, but extremely filling.

@LadyDuck That sounds so delicious! I do not have a lot of experience making risotto (just watching chefs making it on tv ). I'd love to try that combination of ingredients! A new recipe a week - imagine the collection once you do write them all!!

I love freshly made tempura shrimp and vegetables too . . . but not possible for a quick lunch . Ohhh, your risotto sounds so good . . . do you cook in those ingredients or are they placed on the risotto as toppings? I am telling you I will buy your cookbook someday .

@much2say I add the pear (cut in small pieces) ten minutes after I start the risotto, the Gorgonzola cheese only a couple of minutes before serving and I top with the chopped walnuts. I am guilty not writing my cookbook every week I add at least one new recipe.

We actually had sushi the other day . I need to learn to cut fish for sashimi . . . it'd be a whole lot cheaper!!

@rebelann We would only get fish with signs marked sushi grade, otherwise no way. Do you have a favorite ?

@Laurakemunto Ohhh, I am not familiar with those . . . but I do know collard greens. Well, I know them but have not really had them. I just looked up ugali . . . I want to try that !

Lunch was satisfying for sure - I'm glad they ate it all and I didn't have leftovers of the leftovers . My kids had last Friday off for Cesar Chavez - and are on Spring Break this week. Is Spring Break soon for your kids?

@much2say I dont usually have the ingredients here...but I know you can make some decent ones just using ramen noodles. I had mine at Panera.

I love Asian salads! That is what we make sometimes if we have chicken leftovers . . . with either mandarin orange or mango !

@celticeagle Oh I know that one too. When that happens, I'll just get a slice of cheese or a handful of nuts . . . or sometimes just heat up some almond milk to drink.

I love clearing the fridge day. It means I can eat as much as I want and my sister will be happy for once. Food so expensive these days and sure I chip in but we all do. We all to scared to eat to much of the family meals. Sometimes my brother and I are like screw it, I am hungry and finishing that off. The worse is when its like 2 small servings or one big serving. I am always like I am eating it and it gets me in trouble every time. I use logic like no one will eat that anyway because no one will want to do the dishes. I do not know why since I do majority of dishes anyway. haha. Its my way of keeping my brother and sister off my back but does not work to well.

It's hard because I know guys need to eat more - that's just the way it is. I guess the key is to stretch those meals somehow - make it tasty but fill tummies too. I wish you guys could come here and clean out our fridge - because a lot of times we don't get to the leftovers. My kids don't eat a whole lot - yet . Yah, tell me about it - food prices have gone up for sure . But we all gotta eat. I'm just trying to find the deals all the time and like I said stretch meals where I can. I hope you all are getting enough to eat there!!

@crossbones27 I guess they call that first world problems ? If any of us are able to eat daily and feed our beloved pets, we have way more than many others do. But yah, slightly unfair that the pets get more of the good stuff . . . tell Brooklyn to be sure to share .

@much2say We not doing to bad, I do get a bit upset when dogs eat better than me. My sister does not even bother to ask me, here dogs. What the hell. Some people say that is rich people problems. I go I am not rich and I was hungry. Brooklyn give it back.

I should have saved some for you ! I cooked it all, but it wasn't a big deal . . . very easy. The tempura was already cooked in the package - I just had to toss it in the oven was all .

I am cleaning out the refrigerator and freezer too. Last night I made a little corn bread. I layered bun length brats across the top and baked it. Added the leftover chili and the last of the shredded cheese on top. We will have it again today since there are just two of us. Your lunch sounds yummy.

Ohhh, that sounds good! You remind me that I might have some frozen brats . . . that would help to make more room in the freezer if I finally make use of them! That sounds great with the corn bread and chili/cheese!! Leftovers are time savers - love it!
