I’m on a roll

Vince is away so I’ve had a few days to myself. I’ve mostly been sorting through photos and spreading them over all available counter-tops. But now I’ve stopped for the moment as I had a bright idea yesterday. Firstly I shopped – twice – as I forgot to take any money with me first time. Then I did some food preparation. I want to have some meals in the freezer so if Vince doesn’t feel like cooking we have a few easy choices. After tea, I decided I’d make one of the dishes I had planned – a curried chicken with peaches. There are now three meals in the freezer although I haven’t labelled them yet. So, this morning it’s not 9am yet but I’ve made ginger walnut biscuits/cookies and have a beef casserole stewing quietly in the oven. I plan to make mini quiches and perhaps a chocolate apricot slice (bars) before I leave at 2pm to go play canasta with my friends. I also have a load of washing on. GO ME!! I should ear-mark this post as it may never happen again. PS: I used one of my mini butternut pumpkin/squash in the casserole. The photo shows the slice.

Thanks. I'm off to play canasta soon. I'm glad I did the cooking. I like have a few things in the freezer for emergencies.

Vince does all the cooking but I'm sure he gets tired of it sometimes. Not so much tired of cooking but tired of thinking what to have. I'm hoping the frozen meals will give him a break from time to time.

Just lately we seem to be always going shopping 'cause we're out of food. But we bought a bit extra last time we shopped and I now have five meals in the freezer so that's good.

You are keeping yourself very busy Judy. The few times my husband was not around I did those things he does not want to see me do. Re-painted the kitchen ceiling and walls, paint the outside fence and prune the larger bushes using a saw.

I remember once before you spoke about using the saw to prune bushes. Some things are just so much easier if they are not around.

Isn't that dark chocolate on top? I've never actually tasted either pumpkin or squash outside of pumpkin pie so now I'll have to learn about those two flavors.

Interesting, I knew pumpkin could be part of deserts but I had no idea simple squash would be, of course I have never tasted squash so I'm not really sure how I'd use it.

@rebelann To me, it's just the same as pumpkin. Neither is used in desserts here although occasionally now you hear of someone making a pumpkin pie. Mostly they're used for soups, or baked or mashed. Or in casseroles.

Yes, it's dark chocolate but you can use milk chocolate if you want to.

@JudyEv Ha, ha. They actually made a movie about her starring Meryl Streep as Julia Childs. She is a TV personality who introduced French cooking to us Americans. One of her programs was titled "The French Chef." Bon Appetite was one her favorite sayings.
