Baking adventure

I finally decided today to make that sweet potato pie. I boiled, cooled, peeled and mashed up sweet potatoes and had everything mixed up, all ready to add in the potatoes. Thank goodness I looked at the recipe again. It read to add one cup of evaporated milk and I thought it was one can. So, I found a different recipe. Wasted those eggs, milk, spices, and vanilla extract. This time I read that recipe half a dozen times! It was one of those "impossible" recipes that makes its own crust so it's gluten free. Turns out it made three pies! They're kind of good, but Dale said to please not waste anymore of the sweet potatoes. Now, a casserole next week will actually be like a dessert. It's something that Tammy makes at our Christmas dinner and it's so rich and yummy. So, that was my baking adventure for today. How was your day?

Yeah, they're not the best, but I think I'll stick with pumpkin pies. I just had this strong desire to make them.

@1creekgirl Mom made them when I was little but nobody liked them... They taste too much like pumpkin pie for me to eat them. One bite was more than I really wanted.

@DaddyEvil My pumpkin pies are much better than the ones today. But the taste is similar.

@RebeccasFarm I think they were a little too firm is because I forgot you need extra liquid when baking gluten free.

Your pies sound tasty. I made a batch of soft bread sticks, using a basic roll dough recipe.

Did you throw out the mixture with eggs and spices? I would Have put it in a crust and baked it.

I wish I could say yum, but I don't like sweet potatoes and I lost my sweet tooth years ago anyway. My family always makes fun of me because I am the only one who never eats any desserts. But best of luck on your baking and I am sure it will be good.

@porwest The out of sight, out of mind approach works for me sometimes. Until I remember that the out of sight is the freezer.

@1creekgirl Baking is a disaster for me whenever I have tried it, and I can cook like nobody's business. But yeah, not having a sweet tooth helps to curb the appetite for sweets.

When I was working, a co-workers mom made sweet potato pies at Thanksgiving and he would take orders. Her pies were the best I ever ate and there isn't a Thanksgiving that goes by that I don't think of her and her pies.

I do this too or sometimes I want to make a half quantity so I halve most of the ingredients but then forget and put the full amount of others.
