Soup Two Nights In A Row?

It was my wife's idea. I would never have thought to make soup two nights in a row. But she wanted soup, so soup I provide. Last night I made a beef vegetable soup with chopped chuck roast, onions, carrots, Brussels sprouts, potatoes and celery. I ate two bowls and she ate three. We fed one bowl to Mom this afternoon for lunch, wifey had another bowl for lunch, and she made a bowl for me for lunch tomorrow. Tonight I am making a kielbasa vegetable soup of sorts. I browned up some kielbasa. Then added in the onion, celery, carrots and potato. Next up a can of diced tomatoes. I put in a can of pinto beans. Then 4 cups of chicken broth, then a can of tomato soup and made that into another 4 cups of liquid. I added the liquid into the soup and added 3 beef bullion cubes, 3 tablespoons of minced garlic, oregano, and Italian seasoning. Then I added in 2 cups of mixed veggies and I will let that cook for about an hour or just a little over. We will crush some crackers into it when we serve it and I may serve it with slices of buttered bread. I think this will be good. What do you think?

Soup always hits the spot - especially in this weather. Plus it's great to help clear out the fridge of stuff that needs to be used up!

Soup is perfect for winter weather. Plus they are good. I always have to make a rather hearty soup when I make one. This one was definitely hearty. In fact, they both were.

What's the longest you eat the same soup? When I make cabbage soup or chicken bouillon soup we usually eat it for 4-5 days lol.

@porwest I don't know how to make little soup lol. I use a huge pot and it always comes out to be too much of it.

@lovebuglena I am not sure I make little pots of it. I use at least 8 cups of liquid in most of them. And then of course, all the goodies inside. I think we might just be pigs. lol

We actually go through it rather quickly. The beef vegetable soup we have one bowl left and I made that on Saturday. We will eat off the kielbasa one for a couple of days.

Soups are always a perfect dinner for the cold winter months. Go with the buttered bread slices, I love with the soup.

You really can't go wrong with buttered bread...or soups for that matter. I just made my clam chowder and now I am thinking about what I want to make next.

@LadyDuck Potato soup works. Tis good stuff. It's the ONLY part of being the cook that SOMETIMES can be tough, and that's trying to think of what to make all the time. Probably why I gravitate to certain staples so often. lol

I think we all want hot soup when the weather is so cold. We cooked a catfish stew yesterday and will have leftovers today.

Catfish stew sounds very good. Not sure I have ever made a stew with it. I need to find a recipe. I love catfish anyway.

@porwest Dale fries the best catfish. The stew is easy: boil eggs, cut catfish fillets in small pieces. Add water to a med to large pot, add cut up potatoes, onions, salt, pepper, bacon grease and simmer until the potatoes are almost tender. Add fish, simmer gently until cooked, then add cut up boiled eggs. Simmer about 10 more minutes. Then I thicken up the broth a little with a flour roux. Let me know if you try it.

Sounds great to me. I never object to having the same or a similar meal twice in a row. If it's good food, that's all I need to know.

You can put so much variety into soup, as well as use things up. Fill up, and warm up and have plenty to eat at a reasonable cost.

That is absolutely true of soups. They are quite universal, economical, and perfect for winter weather. Both of these soups went over very well, and we still have some to eat for lunch or another dinner.

Soup IS healthy. So many good stuffs in it, and warms the bones on a cold winter night. Usually I make a pot of something once a week, so two days in a row is more than rare for me. It turned out to be a good idea though.

It's definitely the season for soup. We have squash soup today - and yesterday, and the day before. Once I cut into one of these Marina di Chioggia squashes we have to eat a lot of squash!

I can imagine. There are a lot of things like that. It's like cooking a ham. At some point you swear you are going to start oinking and playing in the mud.

@porwest I'm glad it was delicious. I have cheesy broccoli potato soup in the crock pot. I added onions and mushrooms to it. It smells good and will be ready in a couple of hours.

It was DELICIOUS. And hearty and filling. And warming. It checked all the boxes. Plus, we did actually have the buttered bread, and dipped in soup? Heavenly.

Soup 2 nights in a row. Now that was a "soup-rise.” I think your concoction will be a very good meal. You really went "soup to nuts" with all those interesting ingredients.

Both soups sound delicious, especially with the bread on the side. I love soup and could eat it every day. Even in summer. I made a really good minestrone soup earlier in the week and froze some of it in individual containers. I also made turkey chili anoither day this week and froze the leftovers. I think I may have some of that for dinner. Thanks for the idea.

We really do love our soups, that's for sure. Got to be hearty, of course. But they really do fill the bill on these colder days. Not that it is not also good in the summer of course. I just tend to make it more often in the winter.
