What's for Dinner Tonight?

I'm sure most of you have already had dinner tonight, but we are running rather late today. I am doing a one pot meal. Eggplant Dressing. We have our vegetable- eggplant, meat-ground chuck and starch-rice all in one dish. This is a family favorite and one that my mother in law used to make. I tweaked it by adding more spices and give it a bit more flavor. For those that don't care for eggplant, you really can't taste it in this dish. Yum! I had a tostada with cheddar cheese, beef, lettuce, a tiny bit of refried beans, and sour cream.

That sounds really good. We actually found a good Taco Bell in the food category this weekend that filled the tacos up nice and fat like and my Mexican Pizza was also stuffed. Most of the Taco Bells around here have gone way down with like 2 spoons of filling in taco. Sad!!

@AmbiePam Same here. We stumbled across a good one in Natchez, MS on way to my daughters and then this last one in Columbia, MS. I hope those two stay on the uppity up! I would prefer that to McDonalds and most other burger places.

I love eggplant, it's so good. People don't try it so they don't really know how good it is. Yours was no doubt delicious! The day the son got really ill, I was making a small pot roast in the crock pot. I hurriedly slapped it into the freezer with the broth so we wouldn't waste it. Today he said he was hungry, so we had that, with homemade mashed potatoes and gravy, carrots, and salad. He ate it and said it tasted delicious, so I guess that was a big win. He was thrilled to realize there is enough for him to have a meal from it again sometime tomorrow. I was just glad he was hungry. The hospital food wasn't bad, he said--but he did tell the one nurse ''my mom could teach them a thing or two in that kitchen!'' The nurse told me that he told her his mom was the best cook ever. Not true, but nice that he thinks so!

@kareng As far as hospital food goes, it's definitely one of the better ones I have tasted. But he likes Mom's, I guess!

Vegetables fresh from our gardens are the best. I served cold roast beef with lettuce and tomatoes salad.

@LadyDuck That is wonderful. Tomatoes would be good too. I'm missing my Market days and getting a basket of fresh grown tomatoes here lately with the RASH! I'm hoping to make it on Saturday, but with this weather who knows!

That actually sounds really good. The only thing I ever make with eggplant is eggplant parmigiana. In any event, last night for dinner I made planked salmon on the grill with grilled zucchini in a foil pack and some stuffing on the side. All good eats!

Yeah, photos aren't working right now... Hopefully, that will be fixed soon. I'm thinking either a chicken sandwich for late supper or chicken nuggets and steamed veggies tonight.

@kareng I had chicken nuggets and veggies for breakfast this morning... I didn't bother having supper last night. Pretty buys bags of chicken patties. We bake them and put them on a bun with cheese and mayo.

It has a taste that is hard to describe. But I agree with you, it is mild. My little brother used to refuse to eat it. When he was little, we served it at a fish fry by chopping like a french fry and frying it up. He ate them like crazy and my husband laughed at him and finally told him it was eggplant. That ruined it!! Eww, YUCK!! I don't want anymore of that!
