Spaghetti Is Always Good Eats

Spaghetti is one of those dishes that hits our household menu at least once a month. It just never fails to satisfy, and I think it's relatively cheap to make as well and goes quite far providing for more than just one meal from a batch of it. When I make mine, the sauce isn't necessarily from scratch. But it's also never from a jar. There's nothing particularly fancy about how I make it, but it always turns out quite good. I start with diced onion and cook that up a bit in some olive oil. Then I add in mushrooms and cook that up a bit. Then, in with a can of diced tomatoes, a can of tomato sauce followed by a can of water. Stir that up a bit and let it heat up a little. Then I typically add a tablespoon or more each (I rarely actually measure) of oregano and Italian seasoning. I toss in about a teaspoon of thyme and three or more tablespoons of minced garlic, as well as a tablespoon and a half or so of sugar to cut the acidity. I let that simmer for a while. Usually, 30 or 40 minutes or so. Then I add in 30-32 meatballs and let that cook up a bit while I put on the noodles. Halfway through the noodles cooking I add in a can of tomato paste and let it simmer a bit more until the noodles are done. How do you make your spaghetti sauce? I make spaghetti every week, the sauce it depends, sometimes I make a pesto sauce, but I also love spaghetti with clams, a good carbonara (eggs and bacon) or a spicy sauce, no meat, tomatoes, hot chili pepper, garlic, black olives and capers.

@xFiacre - I agree, hard to find the real Genovese basil, but I bought the seeds and grow the plants to make my pesto. Italians usually do not eat spaghetti with a meat sauce, meat goes with tagliatelle.

About once a month I will make baked spaghetti. It's an easy recipe and, oh, so delicious. My husband even likes it. He's not a fan of spaghetti and meatballs.

I've made baked spaghetti once or twice and have no complaints, but still prefer the traditional kind.

Spaghetti is on my menu probably once a week. As you said, it's satisfying and cheaper than other meals I make which helps with the food budget. Lately I've been making my sauce in the crockpot so I don't have to keep stirring it. I throw in cans of crushed tomatoes, a drizzle of olive oil, basil, garlic and onion powder. Sometimes I add meatballs but not always.

@porwest Usually use vodka sauce that comes in glass jars, but I also enjoy making carbonara from scratch

It is very common in our house as well. The sauce depends on what we might like, the kids like cream-based, hubby tomato-based, I sometimes like olive oil

It is fun to occasionally try different sauces. I only call one dish spaghetti though, and that's this one. The other things get called different things.

Why do you add tomato sauce? Don’t the diced tomatoes have that already? Or is that liquid not considered tomato sauce? I love pasta! On occasion I may use Rao’s pasta sauce but honestly, and I know it’s a sin lol, I love pasta with ketchup. I sometimes put pasta in a skillet, squirt some ketchup on it, stir, and let it cook for a few minutes. Tastes great to me.

No. Not the same thing. The sauce is more like a "soup" and adds more liquid to the mix. IMO. As for the ketchup thing, hey...whatever floats your boat. But it's not for me. Not going to knock it, though, as I have not tried it.

Now I just use Ragu. Used to always make my sauce from scratch. My parents used to go out to eat a lot...my mother was a terrible cook. One day I made spaghetti sauce; and my father really liked it. I think I started cooking more after that. I don't remember.
