Leftovers Last Night

Last night my family wanted to have beef chili hotdogs with coleslaw and potato salad. I love this combination, but these will not fit into my eating plan at the moment. So I made their request for them and I had some leftovers. My meal was chicken, lentils and homemade sauerkraut. We all ate on paper plates which made for an easy clean up. Tried to attach a pic, but not sure if it will go through.

I love lentils and sauerkraut. The chili dogs, coleslaw and potato salad sounded good too.

@porwest I like the Progresso Soups but they might be too high in sodium for me to eat from now on. Bummer.

@LindaOHio I don't really eat canned soups. But yeah, there's a ton of sodium in all of them.

I like to make a tomato, basil, lentil soup. Always good and I usually put ground pork sausage in a batch. It will definitely be on my list for winter soups when we get there, which I hope is not any time soon.

I have never tried to make sauerkraut homemade, but I bet it's better than anything in a car or a jar. Maybe I will have to look up a recipe for it. It can't be that hard to make, and I love sauerkraut. I wanted to use up some leftover pork steak from our camping trip, and so I just made pork fried rice with onions, red bell pepper, broccoli and some teriyaki sauce and soy sauce. It was definitely good eats.

My son is our sauerkraut maker. The homemade is so much better than the store bought.

Good for you sticking with smart food choices. I had an event last week where I went to a group and in there they were having a birthday part for one of the members. There were all sorts of fattening goodies. I resisted the chocolate fudge cake, but couldn't quite say no to the cookies and seasoned popcorn. It wasn't a disaster though. However, it would have been better to pop a piece of gum. I also had to try the hibiscuis juice which did have sugar.

Leftovers are always good. It's a pain to make two different meals at the same time. I'm sorry you couldn't have hotdogs, coleslaw and potato salad, too. I ate two hotdogs with sweet relish, diced raw Vidalia onions and ketchup for supper last night. Delicious! Pictures haven't been uploading since yesterday morning.

What is sauerkraut? My dinner is always light. 1 chapati, paneer curry and some milk.
