These biscuits were a failure

My last post was about oranges and I mentioned the difficulty of finding suitable snacks for those with Type 2 diabetes. Vince has Type 2 and I’ve been told I’m pre-diabetic. The doctor would like Vince’s sugar numbers down a little so we’re now having a wrap for lunch rather than a sandwich. Small steps as they say. I do make biscuits/cookies from time to time but cut down the sugar in them. Today, I made some biscuits with oatmeal, sugar-free peanut butter and egg but they taste about as bad as they look (see above). I think they’ll be going in the bin. Edit: They’ve gone in the bin! At least they were cheap to make.

My daughter has Type 2 diabetes and we're going through the same thing with trying to find decent substitutes for foods we love. I'm not pre=diabetic but am willing to cut back on sugary treats, etc and not have it in the house to tempt her. Hope you can find some good recipes but I'm sure with trial and error you'll master it

Healthier versions of some foods just don’t past muster. I mean, I guess if one hadn’t eaten in two weeks we’d welcome it, but healthy recipes for things like biscuits can be really iffy.

Sorry they were a flop. And yes, it’s a long process. The numbers might “spike” but it didn’t happen overnight, and it won’t resolve overnight. As much fruit as I like to eat I don’t want my sugar numbers going up.

Check out sourdough breads for your sandwiches. That's what I've switched to to cut back on sugar. You can get it commercially but make sure it doesn't have added sugar. Those definitely don't sound good to me.
