The Vegetable Verdict

Do any of you have any favorite vegetables? I know, I know, some of you refuse to eat vegetables. I was just laughing at a conversation I had with my dad over the phone last night. I asked him about his day (our phone conversations are about 5 minute tops), and he told me he had dinner at a friend’s house with Diana. Apparently, the friend made spaghetti squash, a type of squash my dad had never had, but apparently loves after that meal. His enthusiasm was comical.
I think most people list potatoes as a favorite veggie, but we all know those can be unhealthy if you’re eating fries and mashed potatoes and gravy every day. I doubt many of you actually do that.
I love most veggies, but it wasn’t always that way. I think as people become grownups they tend to open up their minds to different foods. At least, most of us. So, if you eat veggies, what is your favorite?

Eggplant or aubergine, as we call it, is delicious roasted in the oven. It’s also nice in a Moussaka.

I don’t class potatoes as vegetables, so I’ll rule them out. I love most veg, but I do especially love carrots when they have been slow-cooked in a stew. Caramelised courgettes after they’ve been roasted in the oven are also delicious. Even the humble pea has pride of place on my plate, or even on the floor, after I’ve chased it round with my useless fork.

@AmbiePam Yes, cooked well they can be ultra sweet and delicious.
Anyway, after the tomato debate, I’ve changed my mind and I’m going to say that tomatoes are my favourite veg. I like nothing better than a rich pasta sauce or Indian curry packed full of all that tomato goodness. Onions too, especially since I’ve mastered not crying whilst cutting them. I’m quite proud of that!

@AmbiePam I was dreadfully picky as a child - no tomatoes, spaghetti, rice, cucumber, broccoli, yams, onion … I was impossible. Now I eat everything other than oatmeal, rice pudding and tapioca. I don’t like potatoes but all other veggies are good, especially tomatoes, zucchini and beetroot.

I've always loved so many different vegetables. The controversy over tomatoes being a fruit or a veggie doesn't matter to me as I love tomatoes. Broccoli, green beans, fresh corn, cukes, salad greens...I love them all.

I can settle the tomato debate. No, not how you pronounce it. Would you put cream or custard on a tomato? No? Me neither. Therefore it is a vegetable!

@NJChicaa See, that’s the teacher in you coming out, getting all scientific. I’ve heard the same thing about cucumbers. What about from the cook’s perspective? A delicious pasta sauce or an Indian curry must have tomato and onion as its base. It definitely sits in the vegetable category. Berry my *rse!

I like veggies, especially when it is well spiced and prepared. I often eat it with either boiled yam, potato or rice.
As for favorites? I don't have any. The common one i have access to is ugu leaf and water leaf, though this is probably not the name it's called over there.

Avocado, maybe? Or asparagus? I like lots of different vegetables so it is hard to choose a favorite.

I would love to try the spaghetti squash!
I usually don't eat veggies but when it's prepared in a. unique way, I do try them. Oh and I eat kimchi. And other veggies as long as it's a Korean dish. For some reason, I don't like Filipino vegetable dishes.

@AmbiePam Yes. I can eat vegetable salad. Raw carrots, lettuce, cucumber, cabbage, tomatoes, etc. The moment they're cooked, I can't seem to eat them.
Filipino vegetable dish has a strange taste that I dislike. When I was a kid I was so jealous that my siblings were eating them with gusto so I asked mom for vegetables. I vomited! After that, I never eat vegetable dish again.

Yep, if you can turn veggies into pasta, I'm there! Zucchini is boring, but I love zoodles! Actually, I do have some favorite veggies - I love broccoli, corn, bell peppers, peas, green beans, spinach, edamame, and brussels sprouts. I'm okay with carrots, tomatoes, cucumber, potatoes, cauliflower, red and black beans, pumpkin, onion, beets, and lettuce. I can't stand turnips, radishes, mustard greens, and celery. Okra and squash are boring. That's my vegetable report.

I like spinach and mushrooms. I have always loved bell peppers too. Are avocados a veggie or a fruit?

I like a lot of vegetables--though not a fan of yellow squash or zucchini. Sometimes I'll eat a vegetable raw but not cooked, or vice versa.

My favourite veggies are sprouts ……an unpopular choice I know . I don’t like cooked carrots, although I do like them raw.

You already know my response here lol. I would say potatoes too, even though they are more of a starch, but I guess starches come from plants...so it is all the same lol.
But that is good you love most, that helps a lot to enjoy them.

i feel the same about opening up my mind to some of veggies;especially, cucumbers. my favourite vegetable and fruit is tomato. i love it since my childhood, still do
