Sun and roasted chicken.

It seems spring is finally around the corner. The sun is bright and I want to eat veggies.
Yesterday I placed a whole chicken in the oven and today I have been eating tiny sandwiches made with thin slices of cold chicken breast on delicious bread. I have some homemade mayonaise to use instead of butter.
Now, after I finish this post, I´ll cut up an eggplant, dip it in a beaten egg and later bread crumbs and simmer the slices. That will be my veggie of the day.
Do you eat differently depending on the season? I do.

It all sounds lovely. You are good to make such nice veggies. I do cook differently by seasons and I am anxious for some cool down weather.

That is a good menu. In Indonesia we have 2 seasons only. We eat rather depending on the weather

I eat more legumes and casseroles in winter and more salads during summer.

those cold chicken sandwiches sound so good right now, simple stuff like that always hits different in spring. eggplant done that way is a favorite of mine too, crispy edges just get me every time. and yes i definitely eat different by season, can't help it lol.

Sounds like you're eating good. Yes, I eat light in the spring and summer. Try to eat finger foods, fruit and sandwiches. Then in fall and winter I eat casserolrs, chili and heavier foods.

Yes, we do. We normally eat cold sandwiches during the hottest part of the summer and have delicious roasts, stews and soups during the winter.
