What's your favorite way to have your potatoes?

My kids and grands love potatoes. No matter what, when we get together, I am usually elected to fix the potatoes, and if gravy is required, make the gravy.
I think their favorite is mashed with gravy. But they are very fond of other variations.
Some of their favorites:
Baked potatoes with butter and sour cream.
Stuffed baked potatoes (they really love these!)
Cheesy scalloped potatoes.
Fried potatoes with onions.
Potatoes cooked with a roast with carrots, etc and served with gravy
Potato salad
Potato soup.
There's endless ways to fix potatoes, and we all have our favorites. I personally love sweet potatoes as well, all the kids love them with the exception of the son that is here with me. So every now and then, I buy one sweet potato and bake it for myself, while he has a regular baked potato.
Maybe we can get some good ideas of ways to fix them that we haven't tried yet?

Oh, Marie. I love fried potatoes with onions. You’re speaking my language. Then, baked potatoes with sour cream, cheddar cheese, and scallions. I don’t like butter on my baked potatoes for some reason. Mashed potatoes with gravy is so good, and then potato skins themselves are delicious. A little olive oil to make them crisp, with bacon and cheddar cheese. I’ve had potato skins at restaurants before, but it’s so tasty to do your own too.

@MarieCoyle Oh yeah, I haven’t had fried potatoes in at least ten years. My mom used to make them for me when I was sick. I couldn’t keep much down so she’d make what sounded good to me. Most of the time it was fried chicken and fried potatoes with onions. I never gained weight from it because I was so sick. For three months, I just couldn’t keep anything down.

I don't make fried potatoes very often because...well, you know. They are fried. But I do make them. They do eat a great big panful of them, and there are never any leftovers. But they have to have onions in them! I haven't made potato skins in some time, son doesn't really like them fixed that way, but I sure do!
Potatoes are good comfort food, too.

@MarieCoyle My version may not be recognizable. I put two eggs into the filling but no milk, just the yam/ sweet potato juice. I sweeten it with dates. And plenty of spices.

I have made them with garlic but the kids all prefer just the gravy thing. I always say they think that gravy is a beverage. Strange, I used to love gravy--but now if I do have some, I just trickle on a little bit of it, I don't like to drown the potato with it like I used to.

I love potatoes almost as much as I love coffee
My favorite is probably mashed (oh so yummy) but lately I've been baking them to save on calories. All your suggestions sound good to me and I'm even happy opening a can of whole or sliced potatoes (which I keep on hand for times when I don't have fresh potatoes) and throw them in the frying pan and crisp them up with a little olive oil and salt.

@MarieCoyle i always keep a few cans of potatoes in the pantry. They also work well in stews. I have to agree that some of the fresh potatoes haven't been the best lately and I hate having to throw away food
The last bag of sweet potatoes I got looked great but had absolutely no taste when I baked them. Talk about disappointed

We have done that with canned potatoes in the winter time, too. They are pretty good fixed as you describe. The quality of our fresh potatoes lately has not been good. Even if they look like they will be fine, often when you get them home and cut into them, they have black spots inside. It's good to have an alternative, for sure!

Now I am hungry and want a potato. My favorite is whatever is ready. Today, at noon, it will be potato with pork roast and carrots. I eat when I am bored or overwhelmed.

With my mouth.
Love them baked and stuffed with smoked chicken and some cheese (I have that every week at the BBQ place in town). I also love O’Brien potatoes (diced potatoes with peppers and onions), and I used bags of those (frozen) to make potato soup in the winter.

Oh, I love O'Brien potatoes, I forgot about them. I often make those. Another favorite I make is a baked potato we call a taco potato, basically with whatever taco toppings you prefer. My grandsons really love that meal.

I am tired of french fries...once in a great while they taste good, but when the kids were little they wanted them a lot, so I got away from fixing them so often now that they are grown. But yes, they are good.

We can often get stuffed potatoes from street stalls or food trucks. I love them.

My sister is always looking for potatoes. If veggies get over sometimes or we have gone out for a week, she'd get potatoes on the way and just make two or three items easily for the next day's meals, only with potatoes.
