A Delicious Egg Bake

Egg bakes, or egg casseroles, whatever you want to call them, are just delicious. And yes, I did happen to have eggs in the house to make one since I was able to find a fair enough deal a while back on some and bought a couple dozen. I make mine a little different each time, having a couple of combinations I like to use, and like most dishes like this, there's really not too much you can't necessarily put in them that don't taste good. For this batch I browned up some pork sausage and set it aside. Then I cracked 8 eggs into a large mixing bowl and whisked them into a scramble. I added half of a chopped onion, plenty of shredded cheddar cheese, 1 can of evaporated milk, some sliced mushrooms, and tossed in the cooked meat and mixed it well. Greased a 9x12 baking dish and poured the mixture in, making sure to even it all out, then sprinkled a little bit of Parmesan cheese on top. Into the oven it went, baked at 350 degrees Fahrenheit for a little over an hour or until a toothpick poke comes out dry. Served it up with some buttered toast and a drizzle of salsa on top, it was delicious and of course, good eats. Do you ever make an egg bake? What went on your dinner table last night? ***Not my actual bake, but the picture is pretty good example of what it looks like, although mine is a little less brown on top.***

No, I've never tried making something like that although I do use those ingredients when I'm scrambling eggs. I just call it scrambled eggs with "stuff".

Well, we certainly have scrambled eggs way more often than we have an egg bake, and yes. Scrambled eggs are the same for us. Lots of goodies are put in them like meat and cheese and onions and peppers. It's all good eats, but sometimes an egg bake just has a different concentration of flavors and texture that just makes it a good alternative to have from time to time in lieu of scrambled.

@porwest Pretty is only willing to eat eggs with me once in a while. I'm afraid an egg bake would be too much, so I'd be eating it for a week... unless you can freeze some of it?

@marguicha Meat is still my mainstay, but eggs are certainly an excellent source of protein and a good alternative to meat.

Same here. I love a quiche from time to time, and a strata is also very good. I like omelets, scrambled, fried, poached...you name it. Eggs are just delicious.

I am a vegetarian...pass...it looks too yellow orange brown and red to me...do you use turmeric?

@porwest I am a vegetarian. I cannot digest eggs. So...will settle for a cup of coffee if you offer that at your place. I presume you are inviting me. LOL. I love cakes...but I still get tummy upset...eggs...sigh.

Yes we make those, generally with vegetables like broccoli, peppers and sweet potatoes, and call it a fritata. Never thought of using evaporated milk!

A frittata is very similar. Usually they are a bit thinner though than an egg bake that I find. I make several different egg based dishes, like strata with a bread base, and quiche with a crust base. All are very good and hearty meals.

Quiche is good too, although it has been ages since I have made one. I'd have to actually look up a recipe just to remember how to make the crust. Salmon is my absolute favorite fish.

@LeaPea2417 I haven't bought the boneless ones in a while because they are about twice the cost of bone in, if not more. I usually get bone in for about $1.59 a pound. They're more like $3 a pound for boneless, skinless.

It's slightly different. An egg bake is a little thicker and has less vegetables. Of course, you can add anything you like to it.

I've made similar egg casseroles and they're always yummy as I'm sure yours was, too. A pack of 18 eggs at Walmart was almost $8, so I'm eyeing them a little more judiciously now.

@1creekgirl Oh man. It's still not great, but it's way better. I got a dozen at Ruler yesterday for $1.99. Still more than double what I was paying just a couple of years ago, but way better than what they wanted for them very recently.

I think we'd call this a quiche. They're delicious whatever they're called. Now - reading Fleur's response, we'd call it frittata too. Maybe a quiche has a pastry base.

A quiche is a little different. For example, a quiche usually has a flaky, bottom crust. But the concepts are very similar. I also will make, from time to time, a strata which is made almost the same way, but there is a layer of toasted bread on the bottom.

@JudyEv Strata is very good, and a good way to use "old" bread. It soaks up the egg mixture nicely and uses up the bread.

I have never called it a frittata but now that I think about it, that's essentially what this is. To be a frittata it just needs to have milk and eggs and then of course, any other combination of ingredients goes. I love this dish, though. I make scrambled eggs more than anything, but a good old egg bake is exactly what the doctor ordered sometimes. Incidentally, I do sometimes put cream or milk in my scrambled egg mixture, but considerably less than I use in an egg bake, and not every time.

It's very similar to a quiche except that a quiche is generally made with a flaky crust bottom and an egg bake is not.

I do make quiche but I haven't in some time now. Today, the son asked for French Toast, I was glad to make it for him. I always make extra and freeze some of it, so that he can have it when he wants it, he loves it that he can heat it up and eat it. I myself think it's a tad rubbery that way, but honestly he dumps peanut butter and syrup on it all, so I guess that's a mute point. As long as he likes it and eats it, that's what matters.

I love all kinds of egg bakes. Last night we had grilled ham and havarti on rye bread, and a salad.
