The Great Rice Controversy.

I read somewhere, it may even have been from a MyLotter, that cooked rice goes bad quickly. When I order Tom Kha Gai or Red Curry Chicken from my Thai place, I often keep the leftover rice in the fridge for future use. Future usually means the next day. I Googled it, and it is apparently true that cooked rice can be a bacteria magnet after a day or two, even in the fridge. Have I been subjecting myself to unnecessary tummy aches by reusing cooked rice from my Thai place? What do you do with cooked rice? Do you toss it? Or keep it for a couple of days?

Pretty puts uneaten rice in the fridge and I throw it out when I want to clean out the fridge.

But that could be a day to a week! I am making a vow never to eat "take out" rice when it's over a day old.

Cooked rice and potatoes are particularly dangerous, partly I think because they are prone to grow a certain kind of organism due to their starchy nature and partly also because that is white so it's difficult to see and you might not notice. But generally keeping either in the fridge for a few days is fine.

A few days won't work for me since I only use cooked rice once if I cook just enough or two days if am planning to use it immediately the next day

I wasn't aware of it. Normally we try to finish outside food fast. Once I had got Biryani from outside and it caused me terrible stomach upset. I had to go to a doctor twice to get proper relief. So sometimes outside food can be really toxic..

My mom used to keep cooked rice IN the rice cooker til the next day . . . maybe that's not recommended but I know a lot of Asians who did that. I put leftover rice in the fridge after it's cooled . . . warm rice causes condensation inside the container and will mold up faster. I have kept it in the fridge up to a week and we're all still alive . Make fried rice or toss it in soup. Thai food - YUM!

Since I am Asian, I am guilty of that. I always put rice inside the fridge at night and we are all still alive. We eat it the next day or make fried rice from it

I keep it for a day or two. Anything longer then that, I toss it. I find cooked reused rice is too starch-tasting for my tastes.

I freeze it. I may be one of the people who mentioned rice and pasta being sickening if not taken care of promptly. Freezing it helps convert the carbs into resistant starch.

It was a Mylotter because I remember reading that too. I don’t ever cook rice, but back when I did, I never thought anything of keeping it in the fridge for one more day.

Is it good bacteria or bad bacteria. I have never been sick off rice a week old in the fridge. I have never been sick off many things people say will get you sick. Maybe its all the salt they put in food these days.

I cook exactly as much as we can eat. It is very rare that we have some left over rice...very very rare. Then, I mix it the same day with some butter milk and feed the stray dogs....they are happy...any food is welcome.

I remember that an Indian member always mentioned keeping rice in the refrigerator for a "quick fix". Rice is really a bacteria magnet and it's better not to keep it more than 24 hours (at most).

@TheHorse - If you put the rice in the fridge soon after it's cooked, some say up to days, but I would not eat a day old rice

If I make too much rice I do some fried rice the next day, Further online research brings this Cooked rice can be safely stored in the refrigerator for 4 to 6 days if it is properly cooled and stored in an airtight container. It's important to refrigerate the rice within two hours of cooking to minimize the risk of bacterial growth. Always check for any off smells or changes in texture before consuming leftover rice.

I personally cook just enough rice for a meal. Cooked rice goes bad so fast, Just like cooked noodles or spaghetti. I suggest one cooks just enough rice for a single meal.

I taught food safety classes for restaurants, etc. for several years. Some things stick in my head from that, even now. Rice is to be refrigerated within 2 hours. It should be eaten or discarded in 4-5 days. Some sources say 4-6 days. You can also freeze rice in a baggie or whatever, and then reheat it from the frozen state.
