I’m fixing Pineapple Chicken and Rice with black eyed peas. Pimento Arancini (these I’m not making from scratch) as the appetizer is something I never thought I’d do since I never liked pimento cheese. But then I never had these delicious things. No dessert because we’re not a dessert family. Yes, it’s just my dad and his wife. I’ve only had them over for dinner once before, but they’ve had me over for lunch several times. So I invited them over for dinner Thursday night. I think they’ll enjoy it, although my dad might hesitate with the appetizer. When was the last time you had company? My best friend came over a few weeks ago, but she brought dinner. I should really offer to cook a meal for her too.

We haven't had anyone over for a meal since before the pandemic. If I'm remembering correctly, I invited several friends and two co-workers from Walmart, who didn't have anywhere to go, for Christmas dinner. Everybody had a good time. I like pimento cheese and will buy it once in a while to use as a sandwich spread. I used to make it when I worked at Schreiber's Foods. It was easy and delicious.

I am so glad you did that for them. I know it means a lot not to be alone for special holidays. Do you get your groceries at Walmart? I can’t remember if you said. Anyway, I got the Pimento cheese arancini there, although I bet you could make it from scratch just as delicious.

@DaddyEvil Does your Walmart have the brand, Better Good? I’m going to do a post on it later. It’s a new Walmart line of SO many different foods that are non GMO, more plant based…I’ve never seen so many good sounding things like this new brand they have. I was hoping your Walmart had expanded to have that line there too.

@AmbiePam Up until the pandemic, we always invited friends over for Thanksgiving and Christmas and anyone at work that didn't have anywhere to be was invited, too. That's just how I did things back then. Now, I'm always worried about catching the flu or Covid so don't invite people over who might actually show up. (You will see me invite people who I KNOW live too far away to be willing to make the drive, though. ) If somebody I invite does come over, though, they'll be welcomed into our house and we'll have a good time. I'll be worried about catching something while they're here. Yes, we shop at Walmart here in town. A lot of the time now I don't make stuff from scratch unless I can't find it in Walmart. I've never heard of that before so would bet willing to be it's not available here.

That is great. I am glad you are feeling well enough to cook a big dinner. I had company over Christmas. Friend will probably be here this weekend as well.

The only person who frequently comes for dinner is my oldest daughter. Mostly we go to her house for different occasions. Otherwise it's the whole family here for a holiday or else a lunch when they show up for visits here and there. I love arancini (rice balls) especially ones filled with meat & peas or mozzarella cheese. Your pimento ones sound interesting but I've never had them. I'm sure your dad and his wife will enjoy having dinner with you.

We're holding monthly writer's meetings so I guess my answer is monthly. The last meeting we went to their house for the Solstice. Today we had the younger one in the group over but it wasn't for a meal.

I’d like to have company over monthly, but I don’t have a kitchen table. My dad and stepmom don’t mind sitting on my couch to eat, but other people might not enjoy that (there isn’t room for a kitchen table).

@sallypup I think my parents used to have some. It’s a long shot that they survived the change from my mom to Diana, but I can always ask (Diana got rid of a lot of stuff).

@AmbiePam Folding small tables might help? We used to call them tv trays back in the day. I like that they fold and don't take up much room when not being used.

I love rice arancini, we make them with many different kind of stuffing inside. Your meal sounds delicious. The last time we had company was two days before Christmas, two very good friends came to have lunch with us.

I often have my elder son with me at home working remotely. My younger son comes once a year. Rest of the time I have my meals alone.
