A new addition to my diet!

On a whim, I bought a sweet potato at Safeway the other day. My breakfasts recently have consisted of a bit of steak surrounded by zucchini squash, all smothered in butter and soy sauce. I also put a bit of Worcestershire sauce on the steak itself.
The result has been quite yummy. But why not add a new ingredient? I have never used sweet potatoes in my cooking, so I decided to give it a shot
Yeppers, it worked! The sweet potatoes add an element of...well...sweetness...to the mix, and also a bit of texture contrast.
Wheee!

I used to fry zucchini in the skillet, but they eat a lot of oil, which I don’t like. What I started doing is cooking them in my Breville toaster oven. I cut them up into smaller slices, coat them them with olive oil, sea salt and spices, and then put them in the Breville to bake at 400° for about 25 minutes or so. If you don’t overcrowd the tray, they come out really good.

Just last week one of my co-workers brought in a whole box of zucchini and squash that they grew on their farm, and set them out so that anyone could take whatever they wished. I grabbed a couple of zucchinis and squash and went home that night and sautéed them in olive oil and butter, sprinkled with pepper. I intended it to be a side dish, but it turned out so well that I ate the entire thing as my meal.

They are very good for you. I just made a peach dump cake, except I used peaches I froze last summer instead of canned. I used LOTS of peaches and felt I had to add sufficient sugar plus a little thickener in the juices, because they were not sweetened when I froze them. This is like a cobbler dessert. We will likely eat it with sausages and vanilla yogurt tomorrow for breakfast.

I love squash! Anyway, I just have my veggies steamed. Except lettuce where I put sesame dressing.

I usually keep frozen fries in my fridge and discovered that frozen sweet fries are great to ahve around too,

We had baked sweet potatoes this week and they were so delicious. I've never had them for breakfast but they do work well for dinner

I've cooked a lot of meals over the years. After a time, you learn to experiment a bit. I do that a lot. I might incorporate an ingredient I need to use, or use a different vegetable, etc. It's just fun to step things up at times.
Sweet potatoes are very underrated. They are delicious, and I like them a lot.

Sweet potatoes are great boiled and mixed with either normal potatoes or mashed carrot. Also they are great for putting into cakes ….i do a lovely recipe for chocolate brownies that contain sweet potatoes ….they keep the cake lovely and moist.
