Separated and beaten, gotta chill

Bob left me, but I made him a promise. I did not cheat, either. He noticed we were perilously low on toilet paper.He left me to go get some. So I made him a promise. If he would bring back a box of vanilla wafers, I would make him a banana pudding. I did not cheat. I made the kind of banana pudding where you separate the eggs, make a cooked custard with the yolks, and then beat the whites of the eggs into a fluffy meringue. You put a layer of cookies, a layer of sliced bananas, a layer of custard and then repeat. Top it with meringue and toast it in the oven. Before we eat it, it will have to chill for a bit. I cannot wait for it to chill.

Oh my gosh that sounds heavenly. I had part of a cupcake today. My two year old licked the frosting off then said she was done so I ate the rest.

We had it often growing up as a good way to use up over ripe bananas.It seems to be a kind of southern thing.

We just enjoyed a small dish of it warm. It gets thicker as it sets and gets chilled.

That's exactly how I used to make it, too! But over the years I cooked banana flavored pudding without bananas because I hate when the bananas turn dark.
