The carrot is a root vegetable, typically orange in color, which is from the beta-carotene which is rich in Vitamin A. There are domesticated varieties of the wild carrot in purple, black, red, white and yellow. The root diameter varies from 3/8" to 4" and 2" to 20" in length.
Carrots were originally grown for their aromatic leaves and seeds, dating back to 2000-3000 BC in Switzerland and southern Germany. In 1st century AD Rome they ate a root vegetable called Pastinaga which may have been a carrot or parsnip.
The word carrot was first recorded in English around 1530. Carrots were typically white at that time and not "clearly distinguished from parsnips".
The domestic carrot originated in Central Asia, while the wild version originated in most likely Greater Iran (now Iran and Afghanistan). The carrot of today presumably was bred to reduce bitterness, increase sweetness and minimize the woody core.
Carrot and turnip production worldwide in 2022 was 42 million tons with China producing 44% of the total.
Eating a lot of carrots over a long period of time can change skin color to a harmless yellow-orange.

I do like carrots. Either raw or boiled... I don't like candied carrots, though. And different colored carrots have different flavors. YUM!

I love steamed carrots.
There was a carrot producing plant down the road from us when we lived in our rural home.
I remember a sister-in-law of ours went overboard with introducing vegetables to her daughter when she was a baby.
She fed her so many feedings of carrots that her skin changed the colour to a yellowish orange tint.

How interesting. I used to like to munch on the smaller ones. I use them when I need something sweeter added to a dish.

@LindaOHio ......Have to have mine cooked now. I also wanted to ask you if you knew of the recipe for carrots steeped in orange marmalade tea. It is very good. I've only tried it once but it is good if you like carrots. I'd share the recipe with you but I can't find it. It was years ago. I'm sure you know how to steep tea and just put carrots in it.

Beta-carotene is a precursor of vitamin A, and is converted to vitamin A in the body.
Yes I like carrots. I like them raw, boiled, roasted, glazed, in soups and stews - pretty much any way really! Sadly they do not grow in my garden as they like light sandy soil not heavy clay.

We used to live on the beach. Hubby would bring up buckets of sand and mix it with the dirt. Worked out well..

@LindaOHio I think I might have to do something like that if I want to grow carrots. But they are so cheap to buy it hardly seems worth the effort.

I use carrots in my curry, noodles, sandwich almost everyday. We make dessert dishes like " gajar ka halwa" and " gajar ka kheer" in India.

Yes , I like carrots when my mother cooks chicken curry and has carrots in the dish. I like to eat carrot cake sometimes as a snack with sticky rice and other snacks also.

@LindaOHio That is good you do. Only potatoes here and I wouldn't even say they are a veggie lol. I'd say they are more a starch like bread and pasta than a veggie.

I like carrots, both raw and cooked. If I make glazed carrots it is only a light glaze and not so sweet. I have some shredded with red cabbage, apples and raisins as a salad right now. With the school getting fresh fruits and veggies as part off a grant we have also tried the purple and yellow.

I like carrots but can only get canned, As a child I enjoy them raw because Bugs Bunny ate them that way. If I get raw carrots I like to roast them,

I was getting baby carrots from the grocery store, but now I get carrot party sticks. I don't really like them, but since they are healthy I eat them.

I love carrots. I use them in salads a lot. I also make a carrot salad—shredded carrot, shredded apple, ground cinnamon, squeezed lemon juice, salt, fresh herb (cilantro, dill, or parsley), mayo, roasted sesame seeds. Yum!
